Deconstructed wedding cake with flavors?

So this is my first post, so please be kind. My FH and I have talked about cake and he wants our wedding in general to be untraditional. Instead of having a 4-5 tiered cake, we were talking about having a deconstructed cake (where the tiers are not stacked). As we were talking about flavors, we mentioned flavors that our parents like. His Dad and my Mom passed away a month apart in 2016. As we were talking flavors, we thought we could honor our parents by having them pick a tier flavor, like Mike-carrot cake, my Mom-German chocolate, etc, and then have a two tier stack with our two flavors and cake topper. I’ve searched Pinterest and can’t find a picture to match the vision. Has anyone else done this? What are your thoughts? TIA!!
