Buffet Wedding without servers - Portioning?

Hello everyone!!! So we are having a buffet at our wedding and our buffet will consist of: 2 meats - (pulled pork & hamburger steak), 3 sides - (mashed potatoes/gravy, mac & cheese and green beans), and bread.

Our catering company will only drop off the food, not serve it so I am curious how others may have gone about portions... I know that there is enough food for each person to have a little of everything but I'm concerned that some people may take more than what is allotted for them. If you had a buffet like this at your wedding, how did you deal with this?

Also - I have been planning to add a couple extra 'plates' in there in case but I'm not sure how many extra plates I should account for?

    I’m concerned that the catering company can’t figure it out themselves as far as quantity. You can hire staffing on Thumbtack.com but most buffets have enough food for each guest to take a portion of each for the first trip and then leftovers for a 2nd or 3rd trip. Unless the guests in line have eyes bigger than their stomachs, this usually isn’t an issue in real life.

    The catering company can figure it out, I'm sure of that... we just haven't discussed it because it was a recent concern that a family member brought up to me about a select few that are attending. It got in my head since she said it because I've never been to a wedding with a buffet so I don't know what to expect. It is good to know that this is not an actual thing to be concerned over. Thank you.

    I would speak to the caterer and see if they have recommendations for a serving staff. I would also have them detail explicitly what a serving of each thing entails, so that you can relay that information to the servers you hire. Unfortunately, especially in America, peoples’ idea of portions are pretty skewed, and people tend to take more than a traditional, single serving size. Having a serving staff to dole out portions will put your mind at ease and help eliminate the horrific faux pas running out of food at your wedding.

    We've always ordered BBQ catering like this for graduation/retirement parties with no servers and always have quite a bit of food leftover. You should be fine!

    I agree. I think if anything people try to be mindful to leave enough for everyone to have some.

    Another thing I’d ask the serving company is if their servers will bus the tables and remove full trash

    My sister did this. They ran out of food quickly. Most notably, the only vegetarian in attendance couldn't eat the veggie lasagna because it was gone by the time he got to the buffet.
