Buffet style reception dinner

I am doing a buffet style reception dinner and can't make up my mind if I want the food to be served by servers or do it serve yourself. I prefer it to be served by servers so I know for sure I have plenty of food, but which is less time consuming?

    Servers. We had a buffet and our catering staff was awesome at making sure people were happy with their portions while also keeping the line moving.

    I know the "better" answer it likely get servers, as it prevents cross contamination. However, I prefer to serve myself as I can control the portion sizes.

    I would say servers, that way f someone has food allergies there's a staff person right there to ask and be sure!

    Servers also ensure that the first 100 people don't take too much of any one item and leave nothing for the last 50.

    I went to church-ladies-run buffet after a funeral once (they re-filled but didn't serve). The last 2 tables had scrapings, of the dishes offered, and had to get by with 2 desserts each.

    Definitely have servers. It decreased the spread of germs and it ensures you won't run out, because some people take more than one serving size.

    I agree with Mrs. Coakley, servers are more sanitary. I also think servers tend to up the level of formality a bit.

    Servers.. and ask how it is going to be set up because if it's just one pan of each and you have to wait in one long line that becomes annoying as a guest.
