An omelette or crepe station. Eggs, bacon, fruit, croissants. If you want to go crazy, chicken & waffles! Mimosa bar!

My daughter is having a Coffee, Tea, and Mimosa Bar with pastries during "Cocktail Hour" and then egg croissant sandwiches, frittatas, biscuits/gravy, parfait bar, bacon, potatoes, and tiered cinnamon rolls instead of cake.

Finger foods! Buffet is kind of risky nowadays and many venues don’t even offer them anymore due to covid.

Varieties of sandwiches, varieties of quiche, sausage rolls, veggie sushi, donuts, waffle, etc. Just google finger food and choose.
I plan to have brunch with my bridesmaids, in room, while we are preparing. So we’ll do those.

I agree. I have never had crepes, but I know a lot of people of people like them. I also love omelettes so that would be a delicious option as well. Yogurt and berry parfaits would be tasty, but I would give them the option of what fruit they wanted. I am allergic to strawberries so I would keep any fruit separate from each other in the event you have guests with allergies. Mini pancakes or waffles would be cute apps during cocktail hour. In addition, muffins, bagels, or scones would be a nice option to have. I would also serve tea, coffee, hot chocolate, milk, and juice. For dessert, I would do a doughnut bar or a cinnamon roll cake. Brunch honestly has so many options and would be a lot of fun.

Talk to your caterer to see if they are doing buffets. From what I have seen of announcements on catering websites in my area, they are still doing buffets with no issues so ask to make sure.

As far as ideas, the sky is the limit. Crepes/blintzes, chicken and waffles, chicken fried steak, biscuits and gravy, hash browns or home fries, scrambled eggs, fruit, oatmeal/chia, tea sandwiches, sausage tatertot breakfast casserole, french toast, carving station, coffee/cocoa

See if you can have an espresso bar with coffee/cocoa/Italian sodas. Also you can't go wrong with basic fruit juices with breakfast.
