Any one else having a buffet style wedding?If so,what's your menu?Need ideas..

I know I definitely want salmon and chicken -for the main course as an alternative for those who are allergic to seafood.For the cocktail hour I really want shrimp and coctail sauce with sparkling cider...help

    @Nichole E:That's just it...I know it's traditional to have a soup,and a pasta but I am debating the heaviness of pasta(messiness too-my dress is important first and foremost...accidents happen not on my part but others')lol but the soup thing for me will be skipped all together.It'll be spring and I'm thinking salad and lightly steamed veggies will be a better...or maybe even a pasta salad

    I like your thinking Amanda......my dreams won't allow me to do this but your default shows that you are definitely a wild child!!!!!!LOL I'm sure your wedding will be a blast!

    Our buffet has three entrees and two sides: beef tenderloin stuffed with spinach, red pepper, and feta cheese, chicken marsala, and cheese tortellini with pesto cream sauce. The sides are roasted seasonal veggies and risotto.

    I know what you mean! I'm prepairing myself too... I went to thses too sites and looked around to find easy yummy things to make. I might rent a wormer too. There is so much I'm using from the sites.. like the stuffed cherry tomatos and bacon wrapped green beans. anyways here they are: allcdkitchen.com and allrecipes.com , CD has awesome drink recipes too.. like champagne punches... great for spring time!

    @Kathy R.:For the baked Salmon would it best to do this 12 hours ahead of time?(since I preparing myself)And just keep it warm...

    No! No! No! Oops, did I say that three times! LOL! Seriously, salmon (or any fish) done 12 hours ahead of time, but served warm, will be horrid. It will dry out and taste horrid. NOW, if you did the salmon ahead, and planned to serve it chilled....it would work really well.

    I will be doing a chilled salmon for my daughters shower....I will actually bake it the night before. So, if you serve the salmon chilled, go for it, ahead of time...but please do not make salmon 12 hours ahead and serve it warm.

    A fabulous presentation for salmon.....Bake a whole or half salmon the night before, glazed with plum jam and a squeeze of lemon, dusted with salt and pepper. Then chill. Serve slightly chilled. This is sooooo good!

    @Gail: I hope you are not trying to do everything on your own...to much for the bride. I am having family help with this. Catering is way expensive, plus ain't nothing like some home cooked food.

    My FH and I love traditional holiday food...you know...the two times of year you can eat like a pig and not feel bad about it (Thanksgiving and Christmas)...so that's our menu

    -Turkey

    -Ham

    -Dressing

    -Mac-n-Cheese

    -Green Beans

    -Deviled Eggs

    -Sweet Potatoes

    All the good stuff...I can't wait!!! I'm just hoping that folks won't get to full and not want to get on the dance floor.

    First off...Future Mrs Williams you made me hungry.

    Mine is a buffet also--we had a family friend "donate" a hog and we are having bbq pulled pork sandwiches (my all time fav) with beans, potatoe salad, tossed salad (I have one vegetarian..my bm and that's all she requested) and then our cake.

    We are having a buffet with rosemary and garlic chicken and seasoned tri tip. That way people can choose which meat they prefer. Then there will be a choice between suateed snapped peas, shallots and garlic or a baked potatoe. The meal will be accompanied by assorted breads and a spinach salad mix with nuts and strawberries. I like this because there's something that hopefully everyone will like It actually isn't going to cost very much either. I found a vendor with very decent prices.

    We're doing what I call "picnic style" with ham, turkey and/or roast beef crescent sandwiches, fruit, veggies, crackers, cheese and dips. We can also choose pasta, quiche, chickenitos (whatever those are!) and tortilla pinwheels. It's costing around $8 per person.

    We are having vegetable crudite, fruit kabobs, phylo dough filled w/cheese & spinach, swedish meatballs, teriyaki (sp?) chicken on sticks, shrimp cocktail, crackers and cheeses this is for cocktail hour. For our main course we are having baked salmon, stuffed chicken breast with cheeses,spinach, and something else I 4got, with rice pilaf and string bean alamode. For dessert strawberry shortcake, cheesecake, fudge brownies, and wedding cake....wheeeew think this should b enough...lol

    Well, we are having the following:

    Marinated Roast Beef

    Roasted potatoes with gravy or sour cream, bacon bits, green onions

    Homemade buns & pickles

    Salad with vinagrette

    Spicy Asian Noodle Salad (trying out recipes hoping to come up with one that is as good as one I ate once)

    Coleslaw

    Cabbage Rolls

    My menu is called "Margarita Menu in Paradise" (beach wedding!) We are having shrimp skewers, drunken chicken, and mahi el diablo! Yum!! It's making me hungry thinking about it!!

    I haven't read the responses but I would suggest a vegetarian option. When my venue suggested having that as an option, on the outside I was smiling and knodding but on the inside i was thinking BLACK PEOPLE LIKE CHICKEN! LOL!! But what does it hurt? Right? We actually had about 5 people rsvp for vegetarian. Small number in comparison to the total 160 but I didn't expect any at all. The vegetarian dish will be pasta primavera.

    @Ladylee:You are crazy but that's really true and Ihave a feeling about three people on my guest list will be vegetarian...so I've considered doing some tofu and some whole grain breads with a salad and a few other vegetarian faves..

    @Mrs Williams:No absolutely not!lol I just really want to do the salmon myself...and the candy bar.hahahaha but your menu is to die for..I'm drooling already!

    @FinsSmiley atonishedee you have got to let me know where to get them!

    Beef tips in gravy, pork tenderloin with apple chutney (I think I can't eat pork so I don't remember what was on it), tomato and mozzarella salad, caesar salad, broccoli casserole, mashed potatoes, steamed veggies (heavy on the yummy snow peas). During the noncocktail hour we are having different spreads/dips that the venue specializes in. Our cake is two layers chocolate with butterscotch filling and one layer red velvet with cream cheese. After rereading what I wrote I think we need more desserts (hmm I love sugar!)

    Gnocchi bar

    Followed by cake, cotton candy, donuts, and a BBQ food truck for late night snacks
