Do I really need this right now??? Um no! My wedding is in 4 days and I gave the final head count in for dinner already. What am I suppose to do?!?! Do I really have to add them into the head count or do I just tell them sorry the numbers have sent in come after dinner?

Ugh. I would tell them its to late for them to come. Especially since you said you called them to follow up and that they ignored you.
I would politely tell them the head count has already been given and that it cant be changed

If you've tried every way possible to get them to respond and they ignored you, I would just let them know that although you appreciate their response, it's unfortunate that it has been received past the deadline and that your numbers have been put in already.
