Firstly, I have dairy aggravated Celiac's disease, basically it means that I cannot ingest gluten or dairy, but I LOVE baked goods. I was so worried about finding a bakery willing to accommodate my dietary restrictions for my wedding cake. I called bakeries that had gluten free cake menus to ask about if they could make those cakes without dairy. The answer was always no. One bakery owner who I had ordered several cakes from before my dietary restrictions even laughed at me over the phone when I asked claiming it was "ridiculous and impossible to make a gluten free cake taste good without dairy". I had been looking around here comes the guide and other wedding sites when I kept stopping at the same picture of a gorgeous ombre cake. I was sure that a place that made such exquisite cakes probably wouldn't be able to make a cake that was gluten and dairy free, but I looked onto their website anyways.
I was delighted to find that they had both Gluten Free AND Vegan wedding cake menus. I reached out to find out if they would be able to possibly combine those two menus and make a gf/df cake. To my delight Alison responded telling me they never had done it before but they were up to doing some experimenting for my cake tasting. Alison did several experiments to find a way to make a gf/df cake that wouldn't fall, she worked especially hard to create a vanilla gf/df as she knew my dream was a vanilla cake with strawberry filling and vanilla icing. She came through with flying colors!
My wedding cake ended up being gf/df vanilla cake with fresh strawberry filling with vegan strawberry buttercream and vegan vanilla buttercream. It was INSANELY DELICIOUS! It was also purple ombre, beautiful! We got so many compliments on how fantastic it was from our guests who were shocked it was gf/df.
