I recently worked with Modern Fusion Catering for a Welcome Reception the night before my son's wedding. Although I was in Massachusetts and never met Angelo, the process of remotely planning an event for 80 people was made smooth and stress-free. Angelo's professionalism and expertise truly stood out. He was incredibly responsive, detail-oriented, and proactive in ensuring that every aspect was covered. From menu planning to execution, he provided peace of mind throughout the entire process. The event itself was a huge success, and the food was absolutely delicious. I couldn't have asked for a better experience. Thank you, Modern Fusion Catering!

When we first started planning our wedding, the only thing we knew for sure was that we wanted food everyone would talk about. Another priority was having vegetarian options that went beyond just pasta or cauliflower steaks. 

Chef Angelo, and the whole team at Modern Fusion, completely blew our expectations away.

From the moment we first reached out, he was responsive, collaborative, and patient in answering all the questions we threw at him. 

When it came time to plan our menu, he worked with us to adjust their dishes to suit our (somewhat picky) tastes. 

“Can this be made vegetarian?”
“Can you make sure there are no nuts in anything?”
“Can this dish be made a little less spicy?”
Whatever we needed, Angelo assured us they could make it happen.

We also threw out an idea that more or less combined two dishes. He was not only eager to accommodate our request, he seemed just as excited at the idea of the dish as we were.

These early interactions went a long way in putting us at ease throughout the planning process.

Then we had our tasting. Every single thing we had was so good that we were worried we were going to be disappointed come the wedding day. We thought, “There’s no way they’re going to be able to make everything *that* good for 100+ people!”

We were so very, very wrong. 

Did the first guest we saw at cocktail hour say, “Congratulations!” or “Let’s take a picture?” No, I’m pretty sure they said “This food is so good, I’m already on my third empanada.” Which was exactly what we wanted to hear. And we continued to hear comments like that all night long.

From the moment we reached out straight through to the end of the reception, Chef Angelo and his staff went above and beyond in every way imaginable. The day could not have gone better and we owe so much of that to them. Now I’m just trying to think up other occasions we could have catered so I can eat more of their incredible food.

We’re incredibly glad we went with a buffet instead of a plated dinner. All of the menu options were truly so so good that it would’ve been a shame for our guests not to be able to try everything they wanted.


Cocktail Hour

Mezze Platter 
This felt like a staple we should have but we honestly didn’t have any expectations for it. With that in mind, we were shocked, and happy, when guests talked about how good the platter was.

Vegetable Dumplings
The wrappers were so tender, the filling perfectly cooked. They had great flavor, a delicious, light coconut sauce drizzled over top, and they were beautifully presented. A favorite of the dishes we had. I’d like to be eating many of these right now.

Roasted Mango Chicken Skewers 
Simple and delicious. No matter how many I had, the chicken was consistently perfectly cooked. Never dry. Always flavorful. Fantastic

Roasted Sweet Potato and Black Bean Empanadas
My wife aside, these were the belle of the ball. Guest after guest raved about them, and rightfully so. This was the dish we worked with Angelo to create. We dreamed about eating them for over a year. When we took our first bites, they were so much better than we even hoped they’d be. Hopefully he adds these to their regular offerings because every event should have them on the menu.



Dinner

Jamaican Chicken Curry
The sauce was so rich and flavorful. To cater to our audience, we had Angelo turn the heat down just a tad and it didn't take away from how delicious it was.

Beef Short Ribs Crem Poivre 
Honestly, it’s not the prettiest looking dish. But it tastes so good that that doesn’t matter. The sauce is packed with a smooth symphony of flavor and tastes wonderful with the tender, melt-in-your-mouth short ribs.

Tri-Colored Tortellini Vodka (Vegetarian)
We last-minute changed from a different pasta dish to this one. We were worried that tortellini+vodka sauce might be heavy but were so happy once we tried it. The pasta itself, like the dumplings, was so tender, and the sauce was creamy without weighing you down. It was a total crowd-pleaser.

Even the sides got a lot of love from our guests (Vegetable Fried Coconut Rice, Caribbean Tropic Salad, & Chargrilled Asparagus)

We got married in a tented, backyard wedding on June 15. We worked with Angelo for a menu unique to our tastes as a couple. We wanted our early dating days to be reflected in our menu: Pizza and our favorite Italian dishes. Angelo was very supportive during the planning process and great at suggesting items and wine pairings. Our wedding day was very successful! After 2 months, we still hear how awesome our food was and how interesting it was to watch Angelo create everyone’s personal pizzas. Our gluten free guests were grateful they were able to partake in the menu as well. Angelo’s staff at the pizza tent, our buffet and the bartender were all delightful to our guests. Kudos to Angelo and his staff. Thanks so much for making our wedding dinner delicious!

We worked with Angelo at Modern Fusion Catering for our wedding and were not disappointed! The communication throughout the whole process was amazing and the food was absolutely incredible. They were also extremely willing to work with our guests dietary needs. I would 100% recommend them and work with them again.

Angelo was so great to work with! We needed to pick up food the morning of the event and Angelo provided us with detailed heating instructions that were perfect. Our guests loved the empanadas, sweet potato side and blackened salmon. 10/10 would recommend!

Chef Angelo and the entire Modern Fusion Catering staff were absolutely amazing!! We used them for our wedding and they far exceeded our expectation for communication, professionalism and the most amazing passed hor devours and plated dinners ever!! You may think I'm crazy but give them a try and you won't be disappointed!

I cannot recommend Chef Angelo enough, he was incredible to work with! I have severe food allergies and it was really important to have the meal for our wedding be something I could eat. He worked with us to develop a creative, delicious menu that did not contain any of my allergens which was a dream come true. Chef Angelo answered all of my questions and was able to reassure me throughout the whole process starting with a food tasting. All of our guests have been raving about our wedding meal and said our food was the best they have had! Not only did I feel comfortable but could eat everything on the menu which was so special and I will forever remember. I highly recommend Modern Fusion catering and his tostadas are to die for!!

Angelo and the Modern Fusion team knocked it out of the park for our roughly 160-person Allentown wedding at a non-traditional venue. Angelo helped us create a menu that reflected our personalities and eclectic tastes, while also picking a few safe bets for those with picky palates. We've heard from so many guests, of all ages, about how much they enjoyed the food at our wedding.
