Yum bowls for dinner

I am contemplating on doing either yum bowls or a fajita bar for my reception dinner. Trying to think of something easy and cheap that includes things people could pick themselves without having to worry about certain diet restrictions. Has anybody done either of those things? Or any suggestions on a cheaper approach to the dinner.

I attend 2 churches and several members have volunteered to help as a wedding gift. I figured it would be a pretty easy set up, it would just need to be managed.
