What to have at a comfort food buffet?

So for my wedding dinner i know a small catering company who will do my wedding for cost of food (so lucky!). They will cook whatever I want but I'm not sure what to have as my FH is very picky. It will be buffet style and we need things that can be done reletivly easily in large amounts any ideas would be welcomed main course and desert.

Comfort food you say? Pasta, different sauces, Chicken parm, rice, curry chicken... Whatever you like. It would go for rice and pasta as side dish and then just decide on main dishes. Salads are always good too. As dessert I would go for cookies and brownies.

Mac and cheese, mashed potatoes, beef stew, pretty much anything with lots of carbs or gravy

Macaroni & Cheese, mashed potatoes, corn (creamed, whole kernel on the cob) sweet southern baked beans, rice & gravy and fried chicken.
