Today is the last day of my RSVP/ I Still have to hear from bout 15 more people/couples. Some are coworkers and some are "friends of the fam" that just never got back to me or did get back to me and gave me the "im busy that week but ill try to make it"

Everyone has had MORE then enough time to respond to me. So I decided I wont fully lock in the amount of people until tomorrow and just re-ask the final people. But what do I do in the event I start getting RSVPs after the lock in? Everyone who I really wanted to be there already responded so the people that are left it wouldn't make or break my big day.

I was thinking of telling the ppl who rsvp'd too late , sorry I already gave the final head count

Kind of a leap there, Lilly. I said I couldn't imagine telling anyone they could not attend my wedding if the RSVP is late. Do you not see a difference?

Totally agree that people need to RSVP. It is rude when they don't. I also think, at the same time, that sometimes people travel or are busy or...whatever. Your numbers can be adjusted to ensure against overpaying for empty seats since most venues allow for 10-20% up or down from the number. Check your contract.
