What are you/did you serve at your wedding?

I have a caterer that will serve anything we want him to, and all of a sudden I don't know what I want served!

    We're going pretty informal and doing a buffet lunch--pulled pork, macaroni and cheese, green salad, and watermelon/cantaloupe. Brownie sundaes for dessert. Appetizers will be hot dips and salsa with chips, chocolate pretzel candy, etc.

    Lol, right?! So many decisions ...

    We are double a buffet and have one salad, four "entrees" with one starch and one vegetable.

    We are doing a pear walnut salad. Our entrees are a pesto pasta (vegetarian option), prosciutto stuffed chicken, lemon and herb salmon, and I can't remember which meat we did (some sort of something beef!), garlic and butter red roasted potatoes, and a mixed veggie medley.

    Our appetizers are these shrimp bacon things and bruscetta (sp?) (during cocktail hour).

    We are doing a plated dinner. We will have a veggie and bread display with various dipping sauces, then a Caprese salad, main dish is either filet mignon or stuffed chicken breast (herbed cheese, spinach and sun dried tomatoes) with the sides of roasted parmesan res skin potatoes and green beans. Then we are serving cherry jubilee over ice cream. Then of course still wedding cake.

    We are going to do a pig roast with au gratin potatoes and green beans.we might also do ribs.I just have to figure something for my sister in law she doesn't eat ham so I would assume she wouldn't eat pig roast either.

    Okay, another question.... When you do buffet style, do you set your tables fully? I like the look of walking into the reception and all the tables are set with napkins and glasses and plates and silverware.

    We are doing cheeseburger sliders, fried chicken, green beans, homemade potato chips, mac and cheese, salad, cob less grilled corn and rolls. We wanted foods that we like, that matchs our style and know everyone will eat.

    We are doing a buffet and having the tables all set because I like the look.

    I can't remember the specifics, but we are doing a choice of green salad or soup, then wild, line caught pacific salmon or local chicken. Veggie options are a roasted medley or asparagus and peas, and starch is either herb mashed or roasted new potatoes. Dessert is a trio of three things, a chocolate bar of some kind, some sort of creme brule/custard, and I can't remember the third. The food all sounded really good, simple, fresh, and local.

    hors d'oeuvres

    warm goat cheese puffs, green apples, walnuts

    crispy crab cakes, calabrian chile aioli

    prosciutto wrapped heirloom melon

    Salad

    Organic Lettuces - baby strawberries, hazelnuts, balsamic vinaigrette, goat cheese crostini

    Entrees

    Seasonal Vegetable Risotto - chef ’s market vegetable selection, aged parmigiano-reggiano

    Pan Roasted Local Fish- whipped potatoes, sausalito watercress salad, lemon-caper-white wine sauce

    Desert

    Artisan Local and Italian Cheeses

    Cake

    We're doing a barbecue buffet. We'll have pulled pork, brisket, barbecue chicken, and steak tips with mashed potatoes, potato salad, and corn for sides.

    Our hors d'oeuvres are deep dish pizza, chicken tenders, wings etc. Sure we could have gotten their fancy crab cakes with weird stuff on top, but nobody would eat it. Our dinner is chicken or steak with sides IDK lol

    @LaurenMarie- I was wondering the same thing about setting tables for buffet! I'm going to go ahead and set our tables ahead of time for 2 reasons;

    1) I'm buying badass compostable bamboo plates and want them on display.

    2) If the place settings are arranged, people will recognize plates as "theirs" and know that they shouldn't throw them away if they want a second helping. If plates are set out by the buffet, I worry that guests would grab a new one each time. (At $1 per plate, I'm only buying 1 per guest!)

    We're doing a southern dinner (that's what the caterer called it)...fried chicken, mac and cheese, yams with marshmallows, cornbread, beef brisket, bbq pork, collard greens, mashed potatoes, string beans, iced tea and lemonade.
