Wedding Bundt Cake - How to freeze?

Christine, on May 22, 2013 at 8:39 PM Posted in Planning 0 5

Right now I'm trying to figure out what to do about the cake issue. Orginally, I wanted to do bundt cakes and mini bundt cakes; but people where shooting it down because of time. Now, I'm thinking about it again, and I wouldn't mind have a stacked "wedding" budnt cake and then doing mini ones with fruit and different toppings. I'm just super nervous about freezing the mini bundt cakes and the big ones as well. Does anyone have any advice about freezing these kinds of cakes? I was also thinking about cupcakes, but my fiance is very anti-cupcake. The wedding cake would not kill us to buy, but I honestly don't like the super sweet and stiff frosting that I have tried from others.

Bundy cakes tend to have the same dense texture as pound cake. The best way to freeze would be in foil. Don't top or glaze them before you freeze them. Glazes will tend to get grainy. Allow a few hours for thawing for a normal size cake, an hour for minis.

You talked about cupcakes. There is a store here that only makes Bundy cakes, and they use the mini bundts like cupcakes.

You can also get a "naked" wedding cake without frosting.

That's the plan to make them "naked" and lay out fruit and different toppings for the guest. I'm not a big frosting fan, and I wanted to do something different and save some money.

You can freeze cakes. I go it all the time. cook, when still warm wrap the cake in plastic wrap and put It in a box in the freezer. Works great, even frosted daughters test wedding cake and did the same.

How big is your wedding and how many cakes are we talking?

I know there is a lot going on before the wedding but I if your wedding isn't huge, I feel like you could get it done in a couple hours.

Because a bundt cake has a hole in the middle, I would be afraid they would fall apart if they are frozen.
