Vote: entree options on RSVP card?

I need some help and opinions about what most people would prefer. FH does too. ("Will you please post on that wedding forum and ask those people since they know what they are doing?" lol)

We won't have a tasting at our venue until August, but I need to order RSVPs now. I would be fine selecting the options before the tasting. Here are my questions:

1) Since we only have a choice of two categories (and a vegetarian option TBD), would you go with fish and steak, or chicken and steak? I thought chicken, but FH and I would both actually want salmon ourselves.

2) Which choice(s) would you rather eat at a wedding?

chicken:

chicken piccata with lemon-white wine caper sauce

breast of chicken with wild mushroom sauce

breast of chicken with sherry reduction, capers and tomatoes

fish:

sesame crusted salmon with ginger beurre

seared salmon with white wine reduction

filet of cod with lemon-citrus sauce

steak:

grilled filet mignon with red wine reduction

    I fucking love chicken piccata (I'm a sucker for capers). Also, I straight up don't eat seafood. It's a psychological thing, don't ask. I'd go with chicken or steak.

    If you really want fish, go with fish and a chicken.

    Fish: sesame crusted salmon with ginger beurre

    Chicken: chicken piccata with lemon-white wine caper sauce

    That's me. But if you have picky eaters, go with just Chicken and Steak.

    @VC My FH's family would toss a fit if we didn't offer a steak option.

    Do you have a vegetarian option? I would do the grilled filet mignon and the lemon citrus cod plus a vegetarian. on your RSVP you can write genera things like "chicken" or "beef" rather than the actual entree. If people have questions, they will ask!

    Most people will choose steak. If you like the fish, I'd do steak and fish.

    I always feel like chicken is such a lame option, I never order it.

    I'd offer steak and either chicken or fish. Our options were prime rib, chicken florentine, and vegetarian pasta and close to 3/4 chose prime rib.

    If you absolutely must order the RSVP cards now, before you have tasted the dishes, keep things generic. Just offer "Beef" and "Fish," which would also be my votes. Chicken is a safe choice because everybody eats it, but nobody misses chicken if it's not offered.

    Sesame crusted salmon and filet mignon sounds the best to me.

    but i agree with @mrs. coakley that you can just put fish and steak on your RSVP card and make the final selection after your tasting.

    Thanks for the responses so far!

    To answer the question about the vegetarian: yes, there will be an option for that, though the venue says it won't know until later what that will be. I plan to put "Vegetarian Option" as the third choice on the RSVP.

    So I am just debating chicken and steak, or fish and steak... because we definitely have steak eaters in our guest list.

    I feel like it's a know your crowd type thing. We could either do fish/steak or chicken and steak for the same cost, but we knew more people would prefer chicken over fish in our families. We just listed beef or chicken on our rsvp card because we had to order them last month, but our tasting is next month.

    @SSJKarigan - Same with my family, well "adults" anyways. But steak options are so boring at wedding; even though there is only a couple of ways to serve steak.

    If you don't have to put the choices on the RSVP's dont. Most of our venues take orders at the table. Do you want to pick what you want to eat two months ahead?

    Based on my catering experience, you need a beef and a non beef. In most groups, 60-75% will choose beef. Chicken and fish basically read the same; non beef.....

    The filet is fine; I'd do the sesame salmon. Cod is gross.

    If you want the salmon, then go with steak and fish! I find chicken at weddings typically boring and overdone.

    I agree with keeping the RSVP generic by just stating "beef" and "salmon". That will give you more time to choose specific entrees after tasting them.

    My grandmother loves shellfish, but not every kind of other seafood. I.e. she won't eat tuna out (always too raw, for her) and thinks salmon smells/tastes way too strong. She also doesn't eat red meat. In your instance, like my sister's wedding, which offered a chicken/beef duet, she'd take the vegetarian entrée.

    I love chicken Piccata - so that'd be my bet. I'm picky about fish, while I love salmon, I rather prepare it myself.

    I agree - I think on the RSVPs you should just indicate what meat is being served vs spelling out the whole dish

    Fish and steak with a vegetarian option. Chicken just isn't very "special" and tends to dry out. If you are really concerned about picky eaters, include vegetarian as an option on your RSVP.

    The sesame crusted salmon sounds delicious, and as someone said above, I fucking LOVE chicken piccata.

    We're actually going steak and salmon at ours (with a veg option), because none of the chicken options sounded that exciting.

    I'm super picky about fish, and depending on where you are, it can be hard to get "good" fish, i.e. it won't be super fresh, which really annoys me. I also don't eat steak/beef at all. So I'd offer chicken and steak.

    The other thing to think about steak is that people have different tastes for how they want it cooked. So either you have it all prepared one way, and possibly disappoint people or you have them take orders at the table, which can slow down dinner service. (We're going with a braised short rib for this reason.)
