Veggie Tray Ideas

I am putting together our veggie tray and I need ideas. I have done them before but not for 100 people. Any ideas on how much I should do or should I just keep it simple just the basics? Mainly wondering how many trays I should do.

    Ok I work in a restaurant that does veggie trays for catering. For about 25 people, we do a bag of baby carrots, a bag of broccoli, a bag of cauliflower (lol sp?), 3-4 bell peppers, and maybe a bag of something else, along with about 32 oz. of ranch dressing. So just multiply that by 4 and you should get about 4 bags of 4 different veggies, about 12-16 bell peppers (or other veggie, perhaps celery?), and about 130 oz. of ranch dressing.
