To Brisket or to Short Rib

Andrea, on March 15, 2023 at 8:03 PM Posted in Planning 0 12
Oct 23 wedding: We have the caterer. Had the tasting and we are trying to save some money by doing a lower cost beef option. In this case apple cider braised short ribs or Brisket in an au jus with fresh herbs. Problem is his step mom makes a better brisket than my caterer and my mom makes a better short rib. The catering company is amazing and they are both quite good options regardless of our love for the chefs in our family. Fiance is team short rib and I'm team brisket. So we are sitting at a crossroads. I'd love to see what the wedding planning community thinks. Apple Cider Braised Short Rib or Brisket in au jus with fresh herbs?

What else are you having? It may help us determine.

I'm team short rib because I've had some damn good homemade brisket that would be hard to beat.

Sides are Smashed Potatoes - although if we went with short rib it would be mashed potatoes, brussel sprouts with garlic confit. Fall salad. Its also Family Style so they'll bring the herb marinated chicken with balsamic glaze and sweet potato sage ravioli to the table as well and people can choose their own adventure. Thanks for your vote! Lol seriously so torn.

Apple cider braised beef anything is one of my favorite meals ever, so I’m biased here…go with the short ribs! Although to be honest, I think most people who like one of these options would also be into the other.

Is there one that is easier to eat? Sounds like a silly thing, but I always find it awkward to eat something that takes a lot of work to eat when I'm dressed up fancy. I'm always worried about getting something on my nice clothes. I'm team brisket though because I love it, but I've never had short ribs before, so that's a biased vote! Smiley xd

This is a fair assessment. Short ribs are not like bbq ribs though. If it's done right (which it sure as hell will be) you can eat with a fork and falls right off bone. No mess 😉. Thanks for input though. Very much appreciated! 🤗

Team short ribs here. Love them, and get them as often when dining out.

Brisket would be much more of a crowd pleaser among our guests, though very few if any would pick either choice.

Wow, they both are great choices and I personally would enjoy either! And the sides sound equally yummy! And as there are other food choices, I have the following comment: strictly personally, I think the short ribs would be something a little different and perhaps more "elegant" than brisket, which, as someone already said, is often a family fave recipe and anyone who'd ever made brisket might compare yours to theirs. And anything in apple cider would get my attention too. So I guess my vote is for short ribs. If they're properly cooked, the meat falls off the bone so they shouldn't be any "messier" than brisket or anything else on the menu. I don't think you can go wrong with either, but, you asked! Smiley smile Be sure you get some of the dinner - so often, the bride & groom don't get the opportunity to actually eat - they're so busy meeting and greeting, dancing, cutting the cake, getting photos taken, etc. This happened to me - our "reception" was a champagne, hors d'oeuvres, cake and coffee gathering in the church hall right after the 11AM ceremony (then an immediate family wedding dinner at an elegant restaurant in the evening). I don't recall having anything to eat or drink until the dinner.
