Tipping/gratuity for catering company

Hi! Our catering company has a service fee that doesn’t include gratuity so I am trying to budget how much to put away for tips. In the cost, this includes all servers, bartenders, alcohol, etc so it’s hard to tell how to split that up without giving the entire tip to the owner of the catering company, Also, do we tip the 18-20% before or after service fee and sales tax (26.765%)?

    Typically when tipping a caterer, it’s done as a percentage of the food bill. As you don’t have itemized costings, it may be best to reach out to the caterer and see if it would be possible to get this. It would make it a lot easier for you to figure out amounts to tip everyone.
