Tasty cold/room temp casserole? Anyone have a recipe?

My friends are remodeling their kitchen and I thought I'd make a casserole for them so they aren't eating take out every night. Their oven is gone (microwave was attached) so it has to be something that can be served at room temp or chilled (is that even possible for a casserole?). I don't have any experience with yummy casseroles. Any suggestions?

    Not exactly a casserole but what about a quinoa salad?

    Not a cassarole but I love the Suddenly Salad (bacon and ranch) pasta salad and I add cooked chicken and tomato. I like to eat it with tostada chips. Maybe with crackers? As a matter of fact, I'm having that for dinner tonight.

    I love a big pasta salad with lots of veggies, and then shrimp, grilled chicken or tuna.

    Don't they have a grill? If they don't it's the perfect time to get one!

    Pasta salad is good - try using tortellini instead of plain pasta. It makes the salad more filling. My favorite recipe has:

    1 box tortellini

    1/2 diced bell pepper

    1/3 package diced sundried tomatoes

    1 stalk diced celery

    1 or 2 diced green onions

    Couple oz of diced cheese (I like cheddar, Mom uses mozzarella)

    1 bottle Kraft Caesar Italian dressing (or any Italian dressing)

    Sometimes I add meat (boneless skinless chicken, pepperoni, whatever I have)

    You just cook and cool the pasta, the mix all the ingredients and chill.

    Quiche would work too as it can be served room temp.

    Having spent 6 months out of my home, post fire that my neighbor caused (with his BBQ) I learned that a lot can be done with a slow cooker and a hot plate (borrowed from one of my restaurant friends). LOL! I literally spent that long without a stove or oven, in my temporary housing (my mothers vacant condo with a stove and oven not working.)
