Hello my fiancée are looking for suggestions for a mini honeymoon since we are unable to go on our European planned honeymoon with borders still closed. We are located in NY and are looking for some sort of resort/spa. But we are limited with out options with the mandatory quarantine imposed by NYS.

Have you done a search for resorts in the Catskills? There are a lot of beautiful lakes up there, and I would imagine some nice places to stay there.
DH and I have been to Cooperstown, which is obviously very baseball and beer themed, but they had everything from B&Bs to super swanky hotels.

You should check out Canyon Ranch in Lenox, Mass! It's not to far from Albany and is insanely nice!!
In NY state there's also Mohonk Mountain House, The Spa at Turning Stone Resort, The Copperheard Inn & Spa, Emerson Resort & Spa, and Gurney's Montauk Resort & Seawater Spa!
