Southern California Locals' experience with Top Catering for Chinese-vietnamese banquet receptions?

In a little bit of a pinch as to whether I should enter into a contract with Top Catering before their tasting in January of next year. Their catering manager said they are so busy with weddings (supposedly 3-5 on average) every weekend through 2021, that is why their tasting is so late. Top Catering doesn't have a physical restaurant compared to Paracel and Seafood World, so maybe that's why they're not as readily available for tastings compared to the other restaurants?

We're hosting the ceremony and reception at a non-restaurant venue, which is why the list of caterers to taste have narrowed down to Seafood World, Paracel, and Top Catering. My gut tells me to go with Top Catering since they have just as good ratings as Paracel, Seafood World, and Furiwa. It would be a nice change of scenery compared to the other restaurant weddings I've been to. Recently, I ate food catered by Furiwa and Furiwa's food is ok. So far, Seafood World is the only one of the 3 that's been just as responsive and doesn't wait for me to ask them to schedule a tasting. I don't recall ever eating at Seafood World and both of our parents said their food was terrible up to 10 years ago, but surely they must've improved to receive high ratings?

The taste of food is a priority for us, so if we wanted just any Asian banquet caterer we would've picked someone else a long time ago. I just can't find any other options at this point. I've asked if Top Catering can provide references if those references consent to their information shared. Their response was that it was confidential and a "No" (Alright, understandable). I've seen someone's idea in the forums to ask the caterer if a prospect can arrive after a wedding to get any boxed leftovers, but that doesn't sound right especially since that would mean going to a site hosted by one of the confidential clients.

    It's definitely a leap of faith but actually most catering companies require you to book them (with a deposit and a signed contract) before doing a food tasting! The food tasting is more about deciding which of their dishes you want to serve, and less about evaluating different caterers for hire.

    I relied heavily on wedding reviews to help me book my venue (which also did in-house catering)! I'd follow your gut and go with Top Catering!!
