We are having a causal wedding and I’d love ice cream cake. It’s just the best in my opinion.

Now, if you have setup time for the cake and leave it out for a long while that’s not the most practical, but since we are having a causal wedding, flavor is over style for me.
What are some of your non-traditional cake ideas for your wedding?
Like why can’t we have German sauerkraut cake?

It’s your wedding, so you and your partner can do whatever kind of cake (or dessert) you want! I’ve cream cake would be tricky to set up in advance, but if you can find a caterer to do it, you can just choose not to display it and bring it out closer to your cake cutting so it doesn’t melt!

My sister did cheese cake, they had a larger two tiered round one that they used for cutting and then mini bite size ones in 5 different flavors for their guests.

Expanding dessert beyond the traditional wedding cake is actually really common now! We had planned to serve New Orleans bourbon bread pudding and bananas foster in lieu of a wedding cake. But ultimately decided to have the wedding cake, plus the other two desserts.

That sounds like fun! You might even be able to make one with a local Baskin Robins (might be better if it's a really small event, unless you're planning in buying more than one)
