We have an extremely tight budget as I've been out of work due to health issues (just returned this week) and she says if she sees things on sale she wants to grab them and not ask if we like them. We appreciate the gesture but what if she picks up something we really don't like

I really would have a sit down with her and explain that you do want their help but would appreciate you and your FH having the final word on everything.
