You both are absolutely right.. And i know this, but I'm so caught up in not looking tacky, cheap, and so forth on and being the perfectionist i am when it comes to certain things, who many thought would never get married, I have been over thinking perfection and falling for the hype..

Knowing my side of the family, the food probably won't last 30 mins 😂

You can rent an ice cream cart from a party rental company.

Could they sit in ice buckets? I've seen nice looking ice buckets (made out of metal or ceramic) and the dessert sits on top of the bucket so it stays cool.

You said penthouse, is it in a hotel?

I know every hotel I've worked in has had ice cream coolers, but also a couple of them have had tables (I wish I could remember what they're called!) that plug in a keep the table metal table top cold, like the opposite of a hot plate. Perhaps the hotel you're in will have something like that?
