Ice Cream Sundae Bar? Help!

Neither FH or I especially like cake, so we are looking into alternative desserts. One idea that caught our eye was doing some kind of a make your own sundae type thing. Has anybody done this before? How did it go? What did you do to pull it off? Thanks!

    My suggestion is to have an ice cream truck come and set up the buffet. I have an ice cream truck and we do it for weddings all the time. The brides love it because they book us and don't have to think about it and its one less thing off their plate. We show up, setup the bar, a handout the ice cream.

    When we're done, we pack everything up and leave, the bride has no setup, no clean up, nothing to do but enjoy her day.

    That's an awesome idea! We are doing a dessert bar instead of just Wedding cake!

    We're doing an ice cream sundae bar instead of cake. No caterer, we are pre-scooping ice cream before the reception and serving with toppings and Gourmet sauces. We met at an ice cream parlor so ice cream is a big part of our story; it seemed natural to include in our wedding

    Yes! We did this for our wedding and it was a big hit!!! If it's in summer, make sure you have an indoor space. Keep the flavors simple (vanilla, chocolate and 1 sorbet) and have lots of fun toppings!

    We had some money left over to reach our food/beverage minimum and just added the ice cream sundae bar. I figured it goes with cake and the kids at the wedding will have a ball with that too!!

    I was thinking of doing this along side the cupcakes. If I were to do this, I would rent a soft serve machine to keep things easy, quick and sanitary. I couldn't imagine having 250 people scooping out of ice cream tubs.
