Help, guest rsvp issues!

So our venue has super limited seating. We gave who we could a plus one but if they're single and not seeing anyone (and will know others at the wedding) we wrote the RSVP for "1 seat reserved in your honor". There's then a line that says "_____attending". The problem is, some guests have been writing in bigger numbers than allotted for them!!
One family wrote in 3 when just 2 were invited, and one lady wrote in 3 when only she was invited!
I don't want to be rude but we also don't have any extra room...what do I do!?

    Everytime I see this I am shocked that people actually do this sort of thing. You could wait to see how many declines you have before telling them that they cannot bring guests. It would be perfectly within reason to reach out to these people and say "Hey x. We are excited that you RSVPd yes to our wedding. We think there may have been some confusion because only you (+whoever) are invited but your RSVP has others listed. We wish we could have everyone with us on our special day but our venue has limited space. Please let me know if you're still able to attend without the added guest. We would love to have you." Or whatever. You can be cool about it and see if it would work to let them bring their additional guests. I wouldn't. It's so rude to invite others. I don't know why people do this.

    Yeah, too late for that unfortunately. We have too many incapable old people to do the RSVP online hahaha so they're on paper.

    I used something similar to this and people were shocked that I was calling them out. But people clearly understood they couldn’t bring extra folks after I informed them it wasn’t an option.

    Contact them directly and tell them im sorry but the invite was only for × amount of people and unfortunately we cant accommodate the number you requested

    This - and do not let them offer to pay for their food or negotiate in any way. I had people do this to me at both my weddings, lol, had to make A LOT of phone calls. "You won't come without your kids? I am sorry to hear that, we will miss you at the wedding. Our venue has limited seating."
