Food help?

So I'm trying to get together a list so I can get some quotes. We are doing bbq type buffet. I know I want bbq(pulled pork) sandwiches, mac and cheese, a mashed potato bar. What would be another meat to use?? And do I need more sides? I was thinking maybe potato salad to?

I need help on appetizers. I was thinking a fruit display type thing and I don't know what else. I was thinking maybe some specialty dips or bite size foods. One place offers mini burgers and pizza dip.

    I would go with chicken as a second meat option. Instead of adding more starch, I’d add some grilled veggies or a green salad of some kind as a side.

    For apps, I love the idea of sliders and pizza dip!

    I would do another meat in case any guests don't like pork. Chicken is always a safe bet, but brisket or ribs are also popular on BBQ bars. I would add some kind of green, not another potato dish. Maybe a salad?

    This is our bbq buffet menu: smoked turkey, sliced beef brisket, St. Louis cut pork ribs, vegan bbq tempeh upon request. Bread, garden salad, potato salad, Mac and cheese, baked beans. Pickles and onions on the side (Tx style for my fiancé lol). 2 bbq sauces.

    So here is our menu. We are doing buffet style dinner as well.

    Cocktail hour: pulled pork sliders, assorted cheeses, buffalo chicken dip with tortilla chips.

    Dinner: 2 salads ( caprese and wedge), 2 types of mac & cheese ( 4 cheese and BBQ which is chicken bacon and bbq sauce drizzle) build your own baked potatoes will all different toppings, pork loin and beef brisket and mini corn muffins.

    Dessert: cake for us to cut and assorted cider donuts.

    Definitely add a vegetable side (I wouldn’t do 2 different potato sides). BBQ chicken or brisket (beef) are great bbq protein options!

    i don’t know what pizza dip is but it sounds like something I’d love to eat! Haha

    I agree with chicken as your second meat and a veggie or salad as another side. I wouldn’t do potato salad if you’re already doing mashed potatoes. Maybe some kind of slaw instead?

    I love the idea of sliders as an app! Then maybe other small bites like caprese skewers or mini meatballs? We also had mini Reuben paninis as a passed app at our cocktail hour and they were a huge hit! I think doing a dip could be tricky/messy.

    Beef brisket!!! soooo good. Or maybe some chicken. sides you could do a veggie or maybe just a salad - Cesar or garden.

    appetizer you could do pasta salad or pigs in a blanket, cheese and cracker trays.

    You could do pulled jackfuit! It's great for vegetarians and actually tastes wonderful! Also I might add in something like a pasta salad, salad, or collard greens?
