Fajitas At The Wedding?

FH wants a fajita bar at the wedding. My mom commenced level 5 pearl-clutching, because this means we will not be doing a sit-down dinner, but fajitas are delicious so we're doing it.

The problem I'm running into is that I'm questioning what to serve with it. Originally we were doing a salad starter, but now I'm thinking that we're already lettuce-ing them up with the fajita bar, so would a soup be a better choice?

We were also going to offer two different entrees, but it seems weird to serve, say, either fajitas or steak, as steak is perceived as higher-end, so they don't 'match'.

An option the caterer suggested is to do only fajitas, except we can offer chicken, shrimp, and steak fajitas to get some sort of variety. Is that enough variety?

Any suggestions are welcome.

    I think a fajita bar with different protein options is a great choice! Are you going to serve mexican sides with it as well (rice, refried beans, street corn, etc.)? I'm so hungry for Mexican food now...

    A chicken tortilla soup would be good with it, although I think soup can be awkward to eat when you're wearing nice clothes (yes, I'm a messy soup eater).

    Definitely enough variety. Make sure you have enough fillers for any vegetarians as well (black beans, refried beans, Cowboy caviar, fajita veggies, etc).

    Now I want Mexican! Maybe offer a salad option for those who might prefer a steak/chicken/shrimp salad bowl rather than the fajitas.

    @TMNT, as of right now, we have chips and salsa on the menu, so it sounds like a good idea to keep that.

    @MrsSasswood, I see your point about the soup being messy. Fajitas already might be awkward to eat, I just didn't want to feel like I was giving them a salad before we gave them a salad. Love the meme Smiley smile

    I agree with Sasswood about the messy soup thing. I was recently at a wedding where soup was available and not many people ate it. Soup is hard when you're all dressed up!

    ETA - chips and salsa is also good! I think as long as you have enough topping options available it would be a success. And I like @Lindsay's idea of a salad bowl. You could have the tortilla bowls so guests could build a salad instead of a fajita if they'd like.

    Why not a fajita bar as the cocktail hour or midnight snack instead of plated meal?

    You can do family style meal where fajitas are served and then mexican sides are also served as well. And add in different options like shrimp, beef, chicken, pulled pork or fish etc as well.

    Coleslaw and salad are still good options and maybe more carbs like potatoes/rice.

    We are having a mix of Mexican including fajitas, Carne asada and cheese enchiladas. It comes with the typical rice & beans for sides. I'd look for other options if you are trying to have more than just fajitas.

    @Novak, yep, I'm sure we'll have a few folks who won't think that fajitas are fancy enough, hence why I wanted to try to squeeze a second dish in there, I just couldn't figure out what that second dish might be.

    We had a fajita buffet at ours! For apps we just did chips, salsa, queso and a fruit spread. We had chicken and steak fajitas, beans, rice, grilled peppers and onions, and a lot of toppings (see picture). Shrimp would be a great option as well. I'm from Texas and have been to a couple weddings where the spread was similar. We didn't have any vegetarians at our wedding, but as long as the caterer keeps the seasonings gluten free, it's a good allergy-friendly menu as well. We served sangria as well and that was a huge hit.

    If you want some app ideas that are still Tex-Mex themed but are not soup, you could do jalapeno poppers, tortilla rollups, mini chimichangas, etc.

    I love this! We might do it for our rehearsal dinner! If you're looking for a more substantial option you could add a chicken mole or a chimmichurri steak but as long as you make sure there are plenty of sides I think you'll be good. Do you know for sure that all your guests like Mexican food?

    Yes!!! I am all for anything that isn't traditional wedding food. I am so sick of the normal chicken/beef, rice, and overcooked green bean options. Yuck!

    We had soul food, my first option was Mexican food but H didn't like it.

    Rebecca, as a fellow Texas bride, I salute your post.

    I've been to two weddings with fajitas - my sister's (15 years ago) and a friend (last year). They had the typical beef and chicken, onion/pepper mixture, and then ALLLLLL the good sides: beans, rice, queso, guacamole, shredded cheese, sour cream, tortilla chips, etc.

    Fajitas are big down here. I will say, however, taste them first. My sister's were amazing, the ones last summer - not so much.

    I am not a fan of fajitas, and also not a fan of messy food at weddings. If you could do it as a "make your own" style buffet, it would help picky eaters like me who could skip ingredients they don't like (like peppers). I also think its important to offer plenty of sides - corn (not on the cob), rice, a lettuce salad, etc.

    My cousin did fajitas at their wedding and they had tortilla chips with all kinds of dippings, rice beans, and fajitas with every topping you could think of! It turned out great!

    I love fajitas! They can be messy, but I usually eat them with a knife and fork. If someone is really concerned about the mess I think they can find a way around it.

    I would do salad or ceviche as a starter because I just don't like to eat soup at weddings.

    Oh fajitas,,,be still my heart, I wish we had this option as our venue, but no such luck. =( I think either rice or a tortilla soup like a PP said would suffice.
