Cocktail Party Reception - Will people dance?

We are thinking of having a cocktail party style reception, after dinner time, from 7-11pm. We want to have a open bar, heavy appetizers, a DJ, and dancing. My question is, if the party doesn't start until 7pm, will the guests be loosened up enough to start dancing at 8pm? Most of the weddings I've been to, the reception started at 5pm, so people were ready to hit the dance floor at 8pm.

    How heavy of appetizers? I would want a meal at 7pm. I wouldn't worry about dancing. If you have liquor, food and good music people will celebrate and dance.

    My reception started at 6:30, I think 7 implies a meal. What does heavy appetizers mean to you?

    I dont think so, my cocktail hour was 1 hour, then 1.5 for dinner, then people started dancing.

    ETA: Why does it matter when they start dancing?

    By heavy appetizers I mean slider sandwiches, maybe the stations packages the venue may offer.

    Enough to fill you up, not just some cheese and crackers.

    YOu reminded me of one of my favorite weddings on the penthouse of a boutique NYC hotel.

    This is how it went.

    Ceremony first (evening)

    Right into cocktails and passed hors with stations opening gradually

    Slightly after that, a first dance, then dancefloor opened

    Dancing all night

    Toasts with the cake cutting

    more dancing

    It was a ball. Dancing, drinking and eating all evening. It was fabulous.

    At 7pm, heavy apps would piss me off. Feed your guests. Sliders are not a meal.

    No food in my tummy? No dancing.

    Come to think of it, if i didnt get enough food i would get shit faced real fast and maybe humiliate myself on the dance floor.

    I've gone to a cocktail reception and there was DEFINITELY dancing, and hammered guests. One of which's dress was too short anyway and her beav came out.
