Chicken Entree Ideas?

Hi ladies,

So, FH and I will be doing our tasting in November. I have to get some selections to the caterer by the first week of October and so far the only thing we know we want is red wine braised (boneless) short ribs. I need some suggestions for a delicious chicken dish (post pics if you like). I know we can do the herb-roasted chicken or whatever, but was hoping to stumble onto something deliciously unique.

    Chicken Marsala is a great dish combined with mashed potatoes. The sauce makes a wonderful gravy.

    We did bruschetta chicken as one of our entrees. It was marinated in balsamic vinegar, and had tomato & cheese bruschetta on top with basil. It was a hit!

    I looked at our venue's menu and they have a stuffed chicken breast on here. It's 'sun dried tomato and herbed goat cheese stuff with herbed pan jus'. Sounds busy to me. Do ppl generally like stuff chicken? I just realized I've never had stuffed chicken before.

    I agree with above about chicken Marsala but also chicken francaise(or francese, I don’t know). It’s a lemon and white wine chicken and it is so good. Both choices though have a sauce on them which I think is great to avoid it getting dry!

    We are doing chicken breast picata. Which is basically a lemon chicken with some other seasoning.

    Oh my gosh yes! I tried to make it, it didn't go well or taste nearly as good as my caterers lol.

    One of our options was a truffle stuffed chicken breast that was so delicious! I had never had stuffed chicken before doing our tasting but that was so good that my husband chose that over the filet mignon served with lobster tail.
