Cheesecake

Hello all,

I’m sure this has been asked before, but I couldn’t find any recent forums.

My FH and I do NOT {typically} eat cake, and are planning to do a cheesecake. However, both venue options are outdoors. Our wedding is in August in Eastern NC (where it’s hot and humid). Does anyone have any ideas on how to store the cheesecake during ceremony/beginning of reception?

I’m open to all opinions and ideas. And I’m not sure if this matters but our guest list has approximately 400 people on it.

    Is this something you could discuss with your caterer? They might have some good options for you to rent/use.

    Does either venue have a fridge? Could you do a small cheesecake for your cutting cake then do easier desserts to store for everyone else?

    I would find out what your venue or caterer recommends. I’m sure they have ways to keep it cold. Sounds yummy!

    Maybe. I hadn’t quite thought about other desserts. What would you suggest?

    One venue has a fridge, the other does not.

    We opted not to do cheesecake bites (our baker offered them but they were the most expensive). We did a small cutting cake for pictures, then 4 types of cupcakes, mini peach pies, brownies, and cookies! They offered candy, popcorn, rice krispies, trifles, and shooters too!

    I'd say our average per bite was $2.00. I think it ended up being around the same since we opted for 3 bites per person (we didn't need that much).

    Cheesecake melts pretty quickly, maybe it would hold up a little longer with a protective crumb coating? I wouldn’t expose the naked cheesecake, it tends to get a little sweaty looking if you leave it out too long.

    I love cheesecake! We are actually doing a cheesecake bar where people can add whatever toppings they would like. We decided against going with our reception venue's cheesecake because it is way more then we would like to spend. We are buying the pre-sliced frozen cheesecake from Sam's Club instead. Our venue will plate the cheesecake for us but they are unable to store them in the fridge. My solution is to store the cheesecakes (still in their boxes) in coolers with lots of ice and then have someone in charge of making sure they are thawed before we serve them. I'm not sure this would work in your situation with so many guests but it might be worth a try. Best of luck and I hope you are able to make the cheesecake work Smiley smile

    Are you having a long ceremony and reception? You could freeze it and store it in coolers with ice until you need it?
    My brother shipped me one for my birthday and it got to my house several hours before I got home and it was still cold because it was frozen beforehand.

    Coolers with ice and frozen cheesecakes could definitely work! The styrofoam ones are beats at keeping things cold and not overly expensive. You could also consider using dry ice to really keep them cold-we have had meat shipped to Southern California for FH’s dad for father’s day for a couple of years now and it’s done great even when they accidentally weren’t home and left it out for hours 🙄.

    I expect our ceremony will be at least 30 minutes (we’re doing a couple traditions that can be time consuming). Then we intend to have cocktail hour, as I don’t want people watching our photo-op (being behind the lens at weddings, i’ve learned that it is quite obnoxious having people around who have nothing to do with photos). Then the reception will have a couple things before we actually get to “cutting the cake”.

    I wonder if freezing it before would work. Or if surrounding it with drying would be a possibility?

    I just mentioned dry ice in a reply above! I just wouldn’t be sure how to set it up to ensure everyone is safe around the ice.

    We do have Yeti coolers too, I wasn’t sure if it would work well though. Or if the cheesecake would even fit, it’s probably gonna be 3 tiered.
