Mine is starting at 6pm so I think that's a typical time many ceremonies start so you should have time for pictures.

That sounds fine. Are all pictures being taken before or after the ceremony? Do guests have to drive to another location for the reception? What is the start time and duration of it? Allow for driving time and traffic if that is the case, plus the duration of the ceremony. Whatever time you come up with by working backward is when your ceremony starts.
Make sure you and the photographer are on the same page as far as timelines go. They can tell you when the best time to get shots is.

Our ceremony starts at 6.

I agree with all of the others, I think 6pm is fine the sun won't be going down until around 8:30. My ceremony is at 5:30.
