Being taken advantage of

So I had either a lady 20 minutes away or Safeway to do my flowers. The lady quoted really good prices. And seemed to what I wanted for a vision for flowers. Sooo I told Safeway no thank you. I went to the florist this Saturday. Her prices were twice what she quoted and now she was putting words in my mouth. For inspiration I was like... I want flowers you would pick on a hike in the forest... Now she is trying to put succulants in it. My fault for never learning flower names but I feel so taken advantage of. My wedding is in 32 days I can't go with anyone else.
The florist also said, I kept this day open for you you know. So I'm going to open this again for another client. (I can only afford my bouquet and a couple flower crowns) she also mentioned how she can deliver but now saying that she can't for a small order and I'm just... I'm so stressed. Why are vendors like this?
