Beignets and coffee - when?

My wedding is going to be at a farmers market and my mom is gifting us a food truck rental that serves Beignets and coffee. Beignets are a french doughnut that is somewhat like a funnel cake, but instead of funnel-shaped, they're square-ish shaped and puffy. The rental is for 2 hours and serves 125...

My wedding is going to be at a farmers market and my mom is gifting us a food truck rental that serves Beignets and coffee. Beignets are a french doughnut that is somewhat like a funnel cake, but instead of funnel-shaped, they're square-ish shaped and puffy.

The rental is for 2 hours and serves 125 - that's the standard minimum (we're only inviting 75 guests though). When should we serve these? Would it be too sweet and filling to have as our cocktail hour fare (we're doing food stations for dinner so if the beignet service bleeds into dinner it won't look too out of place)? Should it be an alternative dessert option - of so should we still get a cake?

    Well our venue is an active market at night for all of the local grocery stores to come get their bulk produce for the next day, so we have to be out and cleaned up completely by midnight (can't even pay to extend) because the farmers come in with their goods, so we are thinking ending at 9:30-10 at the absolute latest to give ample time for our vendors to break down and clean.

    I love the idea of these as the favors. Plus, if there are extra our vendor staff can have the rest.

    FutureMrs, the truck is called Beignets2Go. It's white with red lettering. They're at the market almost every Saturday usually over by Shed 5.

    Omfg I would eat everyone's extra beignets! They're soooooooo good. I would say...serve them towards the end and if feasible, provide those little donut bags for people to take one or two home with them for later.

    Definitely alongside when the cake is being served.

    Late night snack as your guests are leaving might be fun too! The fried dough will soak up the alcohol and the coffee will help too!

    Extra choice for dessert. Actually anytime is ok for beignets.

    That sounds adorable and awesome!! Love farmers markets and sweet treats with coffee!!! I know it makes sense as a cake alternative. Honestly, though, as a guest I would be stoked to have it during cocktail hour too hahaha
