My wedding is going to be at a farmers market and my mom is gifting us a food truck rental that serves Beignets and coffee. Beignets are a french doughnut that is somewhat like a funnel cake, but instead of funnel-shaped, they're square-ish shaped and puffy.
The rental is for 2 hours and serves 125 - that's the standard minimum (we're only inviting 75 guests though). When should we serve these? Would it be too sweet and filling to have as our cocktail hour fare (we're doing food stations for dinner so if the beignet service bleeds into dinner it won't look too out of place)? Should it be an alternative dessert option - of so should we still get a cake?
