Beignets and coffee - when?

My wedding is going to be at a farmers market and my mom is gifting us a food truck rental that serves Beignets and coffee. Beignets are a french doughnut that is somewhat like a funnel cake, but instead of funnel-shaped, they're square-ish shaped and puffy.

The rental is for 2 hours and serves 125 - that's the standard minimum (we're only inviting 75 guests though). When should we serve these? Would it be too sweet and filling to have as our cocktail hour fare (we're doing food stations for dinner so if the beignet service bleeds into dinner it won't look too out of place)? Should it be an alternative dessert option - of so should we still get a cake?

    I'm in love with this idea! And your wedding sounds adorable. An alternative dessert makes the most sense for me. I don't think cake is necessary, just a small one for cutting. But I also don't like cake. . .

    Yummy beignets! I would vote for dessert as guests do enjoy a cup of coffee before returning home. However, if you feel most of your guests will leave early, that might be a waste.

    FutureMrs_J, not an NOLA wedding, that's just my mom and my favorite place. We live in Detroit and there's a Beignet food truck at the farmers market every Saturday and it's become our tradition since our first trip down to NOLA two years ago.

    Beignets!!!!!!!!!!!!!!!!!!!!!! OMG, can I come??? Seriously though, I think it would be best either as a separate dessert or a late night snack for the last couple of hours.

    I was thinking of doing this or a snoball truck for my New Orleans wedding but alas, it's probably not in the budget. I was going to do it as a snack toward the end of the reception. That's often the best time to get beignets anyway, at the end of a long evening.

    Serve them at dessert for sure and also get a cake. They could even be considered your favors! At my FSILs wedding her favor was an assortment of desserts including beignets with To go containers and it was fantastic!

    Yes, an extra dessert option, in addition to cake. Many people have dessert bars or multiple dessert options so it's not unusual. Sounds great!

    I think it should be during cocktail hour because it'll give your guest something to do besides possible stand in awkward clumps. Getting food from a truck is also something that's almost nostalgic while being incredibly modern.

    What time is your wedding? Could this be a late night snack? Otherwise I'd make it one of the dessert options.

    I would do it after dinner as an after-dinner dessert option. DROOL! I want a beignet now! I'm also curious to see photos from your wedding and the farmer's market venue/backdrop Smiley smile
