I can’t thank Claire, Grant, and Lindsey enough for ensuring our Vail wedding had the absolute best food and service! We had several guests tell us it was some of the best food they had ever had at a wedding and they were incredibly impressed with the presentation as well. When we were trying to find a caterer initially, we had done a few tastings with more “corporate” caterers and were ultimately unimpressed with the quality of the food. After having our initial consultation with Claire, we knew GB Culinary was the direction we would rather go in. My partner and I are serious foodies and really admired their commitment to taste, customization, service, and presentation—A+ in all categories! It was amazing to work with a luxury, farm-to-table caterer who so perfectly mirrors our same values. I would highly recommend hiring GB Culinary for any of your catering needs as they can handle an event of any size and caliber!

If I could give 10 stars, I would. GB Culinary is the most exceptional catering company in Colorado. I got married in Estes Park at The Stanley Hotel this past summer. I had a big-time vision, and when I tell you these people executed that vision - I mean it! The food was highly talked about by guests and vendors alike, and you know you can't say that about every wedding you go to. Everything GB does is made to feel personal, luxurious, and detailed. Claire, the director of operations, is quite literally the nicest, most thoughtful, and determined person I have ever met. Every person she interacts with comments on how much "she genuinely cares." I really felt that she wanted me to have the best day ever (which I did). If you are in her hands, you will not be disappointed! The food was phenomenal, the service was A+, and I couldn't come up with a complaint if I tried. The tasting with GB was hands-down the most enjoyable experience I had during the entire wedding planning process, and my husband stands firmly in his belief that it was the best meal of his life. The day of, there was no detail missed. The photos speak for themselves. You can even have a cookies and creme Oreo cake if your heart wants it (which ours did). If you are getting married in Colorado, take catering off your plate early on and call GB Culinary!

We worked with GB Culinary as our wedding caterer and the experience was nothing short of spectacular.

First, the food is simply amazing.  The menu design is all custom, utilizing the freshest ingredients and inspired by the season of the wedding.  The dishes themselves are fine dining level and works of art.  If you want to impress with food, then GB is the caterer for you.  They also take the service itself just as seriously - again elevating it to fine dining levels, with the servers taking great care in providing a personal touch for every guest.

Just as importantly, Claire and her team were absolute joy to work with.  She was incredibly organized, responsive, patient, and wonderful to work with.  They provided so much guidance and helped us keep everything on track.  The detail-orientation and professionalism is well beyond what I have experienced working with someone, in almost any context.  GB is truly the best!

Where to begin with my review of GB Culinary? From first contact with Director of Operations, Claire Ploegman, through my wedding day was perfection. Claire listened to my ideas and diet restrictions. Then, she and Owner/Chef, Grant, presented many appetizers, mains, sides, and desserts from which to choose. After several consultations, a tasing menu was constructed. Then – the tasting! This was an event in and of itself! Grant prepared several vegan dishes as well as non-vegan. His talent as a chef shone! Claire took copious notes of our comments about each item– making decisions after-the-fact much easier. Our menu consisted of passed appetizers (all vegan except one), 3 main dishes (2 vegan, one beef) and an all-vegan selection of mini desserts.
In addition to all menu and service planning, Claire took charge of all rentals, wine, beer, and bar selections. She and I consulted and arrived at what would become an extraordinary, and beautiful, yet simple and elegant setting. The service staff of GB Culinary is top in the industry. My guests commented that the staff was unobtrusive, a drink was always at the ready and the appetizers seemed to just appear!
I highly recommend GB Culinary for any event. I assure that you and your guests will be more than comfortable, service will be seamless, and the drinks and food will be superb!

Working with GB Culinary was a real delight. Their manager of operations, Claire Ploegman, is calm, steady and thoughtful in every way. She guided our steps and connected us with great vendors for place settings and wine. When I started getting anxious before the wedding and worried about all the details, Claire kept me calm and relaxed throughout the process. We met the owner, Grant when we had a special tasting at his farm which was a full meal with lots of options for us to try with my parents and fiance. Every choice was thoughtful and special, so different from many catered experiences I have had. For our wedding dinner, they prepared the most delicious peach galette that everyone was raving about. No one noticed that we chose not to have a wedding cake! His team took good care of all our guests and we are delighted to recommend GB Culinary for your special event.

To merely call GB Culinary a catering company is arguably one of the cruelest understatements possible. Working with Grant, Claire, and their team is a true partnership that results in the most creative, thoughtful (not to mention delicious) meal to accompany any special event. When my husband and I began corresponding with Claire during our wedding planning, we found in her a true collaborative companion, welcoming questions and feedback with open arms and a warm smile. When we visited GB Culinary's kitchen for our tasting, we truly came to understand the breadth of their gifts and services. While my husband and I sampled the menu Grant had crafted for us, we discussed what we enjoyed, what we'd love to see more of, and we asked questions. Claire thoughtfully took copious notes on our reactions as Grant led us through his incredible creations. Upon my husband mentioning that he enjoys fermented foods, suddenly black garlic was a possibility on our final menu! What impressed me most was the absolute care GB Culinary took with our guests with dietary needs. About halfway through our planning, my dietary needs shifted, and we needed to make our menu gluten and dairy free. Done, no questions ask. We also had a number of guests with allergies, all of whom were accommodated seamlessly. What struck me the most, though, was how these guests remarked that their respective servers took the time and care to identify them at their tables and verbally confirm that none of their specific allergens were present in their food that evening. Especially for those who experience severe, if not life-threatening reactions, this level of care and safety was absolutely paramount. If we're ever lucky enough to have a celebration worthy of catering needs again, we won't think twice before partnering with GB Culinary again.

We used GB Culinary for our recent COVID-friendly wedding and cannot say enough good things about them. We did tastings with several other caterers in the area but when we had our tasting with GB it was a no-brainer. They go above and beyond in all aspects of their business. Claire is the sweetest person you will ever meet and is quick to respond to any and all questions. They focus on sustainability and using what's in-season so rather than having a cookie-cutter meal planned out a year in advance, they got a sense of what we liked and didn't like and created a meal from that. And it was INCREDIBLE. We continue to hear from guests that the food at our wedding was the best they've ever had, and as a couple that has been to a LOT of weddings we 100% agree. After we had to cancel our original venue 3 days before the wedding due to wildfires and book an entirely new venue, GB didn't miss a beat. Claire came for a last-minute walk-through at the venue in the middle of the day and reassured us that everything would be fine. They had never worked at the new venue before but you never would have guessed it. The service was absolutely amazing - another thing several guests commented on! We recommend GB to anyone planning a wedding in the Denver/Boulder/Longmont/Lyons area - you will not regret it!!

GB Culinary was without a doubt one of the highlights of our wedding. My husband and I are both vegan, and we were really passionate about creating a vegan menu at our wedding not just to share the food we like with our guests, but to share some of our values as well. That concept, that food is not just a meal but a reflection of values, is something that is core to GB Culinary. Plain and simple, the food was made with love. From food sourcing and seasonality, to flavor and texture, to serving style and dining experience, GB Culinary gave our wedding an "it factor" we couldn't have put words to. From our first tasting months earlier, we knew through the entire planning process that our food was going to be a smash hit. Claire worked with us every step of the way, not just in the menu planning, but in all of the logistics surrounding mealtime, to ensure that every detail went off without a hitch and that our guests felt completely pampered. We are forever grateful to Grant and his team for supporting our vision so beautifully!

GB Culinary went above and beyond to make sure we had the menu we wanted for our intimate wedding in June 2018. From the first tasting we knew the taste, quality, and service was right in line with what we'd imagined. They traveled to Buena Vista, cooked in a garage, and re-arranged when we had a torrential downpour - all seamlessly. The food was delicious. The service was excellent. Can't recommend them enough.

My partner Kate and myself couldn't have been more happy with GB Culinary. From the initial tasting on Grants passion for food shone through in his dishes. We wanted the food at our wedding to be a primary focus. After tasting with a few other catering options we got a recommendation for GB. At our tasting the menu Grant prepared was one I would seek out in any restaurant. The proteins were cooked perfectly and the side were creative and delicious. The vegan option Grant made was outstanding. Grant and Claire are great at communicating and easy to work with. They tailored our wedding menu to meet our vision perfectly. Claire was incredible to work with through the planning process and the day of. She offered a great deal of insight and knowledge. She is patient fun to work with and organized. The service at our wedding was outstanding. We had a seated dinner for 170 people and the food came out quickly and hot. The food was delicious and plated beautifully. Guests commented on the quality of food and the outstanding service. GB culinary is really elevating traditional wedding food. We had set out to have truly exceptional food at our wedding and GB made that dream come true. I would highly recommend anyone looking for a caterer for their wedding to work with Grant and Claire.
