You don't need witnesses, the State of Florida doesn't require them. When you get the license they tell you that you can have witnesses sign if you want, it is personal preference. So it is not your officiant's fault there are no witness signatures, it's yours

I met Alba Schrumpf at a bridal show. She seemed to be very nice in person and on the phone. She said that she had over 200 sample ceremonies and that she would keep emailing until I found the one I wanted or could piece one together. After I received around 10 samples, she was annoyed that I requested more and didn't understand why I couldn't find what I wanted in only those 10. I ended up getting together with a friend a writing the ceremony. Alba read my words that day, she did read it well. However, she NEVER HAD ANY WITNESSES sign my marriage certificate. It was validated by Florida State… but the witness section is blank and I don’t feel comfortable with it.
