Cake Advice...... please!!

Heidi, on January 5, 2010 at 8:51 AM Posted in Planning 0 17

Any advice on cakes, we want the colors to be ivory and black but would like different flavors. There will be about 100 guests so would 3 tiers be too much? Has anyone done the cupcake idea?

I am doing cupcakes. We are getting four different flavors with different color icings that match our colors (lemon = yellow, strawberry = pink, vanilla = green, and chocolate because you have to have some chocolate.) We are getting a small cake for top for us to cut.

Depending on how big your cake is. My 3 tier cake feeds 175 people but I choose big cakes. If you get a smaller size, you should be fine.

I've seen some cupcake wedding cakes that are absolutely gorgeous.

Unless you do 3 small tiers, it's too much. how big is each cake? my cake was 6", 10', 14"...according to the bakery chart that fed 90 ppl with their generous slicing....it actually could have fed 150 ppl

    More cupcake pics Smiley smile

Now of course there are all different sizes of cupcake towers and/or you can have a small tower like the ones I showed and then display the other cupcakes around it.

Here are some ways to display them Smiley smile

Thanks everyone especially for the photo's. Can you do special flavor cupcakes like red velvet, cheesecake etc.? And do you do 1 or 2 cupcakes per person?

If our completely opposed to the cupcake thing. My idea was the have each cake with 3 different flavors. We have 3 ifferent hieght tiers (small) and I was going to put a small cake on each, but each cake would have 3 round layer of cake, a chocolate one, a vanilla one, and then a mocha/coffe type cake, with vanilla icing, that way each guest gets some of each flavor with their slice. If that did'nt make any sense, this might help:

    CAKE LAYERS:

    CHOCOLATE

    Vanilla Buttercream

    VANILLA

    Vanilla Buttercream

    MOCHA

Heidi, depending on your bakery, yes, you can have different flavored cupcakes. As far as amount, we are getting original size cupcakes so we are getting 1 per person with about 15-20 extra (just to be safe). What we were going to do before we changed our plans, after we cut our small cake and did our thing, we were going to have someone stay at the table(good friend or close family member) and the dj was going to announce to go up and get your cupcake, this way to be sure everyone took just 1, once everyone got their 1, whatever was left, go for it Smiley smile

3 tiers would be fine for 100 servings... you could even do 4 with the right sized tiers. It all depends on how big your tiers are and what shape they are. A 6-9-12 round cake is 100 servings. I can't believe someone sold a 6-10-14 as 90 servings... that boggles my mind... that's 130 servings in my book as a round cake. You could do a 3 tiered cake to serve 40 if you wanted to... it's all in how you put it together. =]

Was actually looking for ideas for my daughter's birthday cake and found a black and white wedding cake. This was on a cake site as I am working on trying to learn alot more on decorating cakes. Since it does belong to someone else I don't feel comfortale posting just the picture.

The cupcake is a great idea and if you wanted to, it could be something that you could do yourself or have a family member do to save a little $$. I have seen them and they are awesome!! Key thing is to make 20% more than you actually need, for the "just in case" moments. A bakery can make the cake for the top for very little money too (depending on where you go.)

The standard for wedding slice sizes and how many serving per tier can be found at this link:

    http://www.wilton.com/cakes/making-cakes/baking-wedding-cake-2-inch-pans.cfm

The Well Dressed Cake is correct about the cake servings. You were sold way to much.

Remember that 99.9% of bakeries charge per slice. It doesn't matter if your cake has 10 tiers or 1 tier. You are paying for how many people the cake will serve.

For example, I have a wedding cake order in August for 20 people. But, the bride and groom like the look of a three tiered cake. I am making them a 3 tiered cake. So they won't have a ton of left over cake, the 10" tier will be real (and actually feed 38), the 8" and 6" will be fake tiers. There is a slight break in the price because 2 tiers are not real, but not much because the time to decorate those tiers is the same - styrofoam or cake.

You can definately get a 3 tier cake to serve 100 people or less. You can do a 6 in round, 8 in round, and 10 in round to serve 78. A 6 in round, 9 in round, and 12 in round to serve 102. A 6 in square, 8 in square, and 10 in square to serve 100.

It all depends on portion sizes, most wedding portions are relatively small but there is no standard, it's your wedding cake!!

I always direct my customers to http://www.bakingit.com and get them to have a play around with the "cake tier combinations" calculator. They can input portion sizes, number of portions and play around with tier height options. This always helps to give you a visual idea of your wedding cake as what you have in mind may not always work if it won't serve enough guests or you have too much cake.
