What to choose for entree and carving station

We are having stations at our wedding and we have to choose a carving station (roast top sirloin of beef with bordelaise & horseradish sauces, or roast turkey breast with honey dijon and giblet gravy, or honey glazed ham with warm pineapple sauce & honey dijon) We thought the sirloin but I would like your opinion.

Also we have to choose an entree station (chicken picatta - lemon, mushrooms, & capers) or seafood newburg -- haddock, shrim, scallops & lobster in a puff pastry shell, or baked fresh scrod with seasoned cracker crumb topping) I really like seafood newburg but am not sure how popular it would be.

We also have a pasta station(fetuccini alfredo AND tortellini marinara, a salad station (mixed greeens, strawberry, and caesar) and a dessert station.

    I had carving stations as well, and it was a big hit! I would go with the sirloin and newbury, that way you cover all the major meats (steak, poulty, seafood, vegeatarian). We went with the turkey, and it was sooo dry!
