What kind of plates for buffet style dinner?

Hey all! This may sound silly but I need advice on plates for a buffet. What would you rent? One big plate for everyone with some extra plates just in case, or would you order an averaged sized plate + a salad plate + a dessert plate for each person? We are having a gelato bar so I don't feel we need the dessert plate but I guess I'm just unsure about the salad plate. I never thought I would give so much thought over plates!

I would go with one big plate if the dinner is not being broken up into courses

Would it be possible for the salad to be plated at each seat? That would be my fave, if not, a really big plate with some extras.

Because my caterer does not provide any China/flatware/glassware and most don't in that area. But thanks everyone for the advice!

Even if the caterer doesn't provide it (mine doesn't and I can rent through the venue) they should be able to recommend what you need. Mine even recommended down to the number and size of table cloths!
