What do you expect from a taco bar?

100 days and we officially had our second caterer to back out on us (due to unforeseen medical issues). Soo.. yay! Here we are. So, we are in the search for a new caterer with less than 4 months to go (fun). Sorry for the second post in one day, but in a crisis and need some advice here..

Our wedding is 5/5/18 and we are having tacos for our wedding dinner, and as I'm searching I'm hoping to put together a new list of expectations to make the catering search as easy as possible.

If you were at a wedding that had a taco bar as the main dish, what would you expect to be offered? Meats? toppings? sides? supplemental dishes? What would make the bar good enough to satisfy the guests of our wedding?

Please give me suggestions so I can make this as affordable for us, but pleasing for our guests! I'm so dang laid back that if I were at a wedding, and they just offered a tortilla, ground beef, and cheese, I would be happy. But I know that's not ok haha.

I appreciate any feedback.

    I love Mexican food in general & live in SoCal, so we get it authentic and in abundance haha. The annual Halloween party we go to did a full taco bar last year. The party's annual budget is probably as much or more than my wedding (must be nice to have an extra $20k laying around every October), and it was definitely a hit. I wouldn't be surprised if they just hired the guy that sets up outside the clubs in LA at 2am with the hotdog and taco grill in his trunk, either. I've been to weddings with BBQ and with Mexican buffets, (more so the latter route probably due to local demographics) and I think I actually prefer tacos over the smoker/grill option. They've all been more casual weddings, so the style of food made sense (usually outdoors at a hacienda or adobe or something along those lines). There are definitely ways to make the taco bar nicer so it feels more like a good Mexican restaurant than the "drunk trunk grill guy" hahaha. I like the empanadas too because you can use a fork. Tamales might also be a good option! You can go ones with chicken or carnitas and ones with just cheese and chiles

    A variety of meats. Hard taco shells, tortillas, maybe different kinds of each (sizes, boats, mega stuff etc) cheese (different types), lettuce, tomatoes, avocados, guacamole, sour cream, onion, jalapenos, cilantro, refried beans, black beans.

    Just think about what Chipotle or Moe's offers!

    Maybe offer bowls vs tacos?

    Rice, Beans, Meat, a variety of hot sauce's, sour cream and quac, lettuce, pico, cheese!

    Meats:: Asada & Chicken for sure.

    Toppings: cabbage, cilantro, onions, limes, red salsa, green salsa, pico de gallo and guacamole.

    Sides: rice and beans, chips and salsa.


    FH and I are doing quesadillas (is more than just tortillas and cheese, we are adding meats and such), rice, beans, chips & salsa for dinner.

    For cocktail hour we are doing mini taquito's, mini bean & cheese burritos, and mini chimichangas to go with the micheladas being served at the bar.

    If you're going with a place like Moe's they set up the whole taco/burrito bar with absolutely everything you would need. They have it down to a science lol

    I would expect legit, authentic tacos. For that, all you need are small corn tortillas, meat (carne asada/chicken/al pastor/carnitas), good salsa (red and green), cilantro, chopped onion, and limes. Rice and beans on the side and horchata and refrescos to drink.

    My future SIL did tacos and it was great. She only had ground beef and chicken meat options there was pico shredded lettuce guacamole sour cream soft shell or tortilla chips onions peppers refried beans shredded cheese queso salsa verde and a small amount of hot salsa.

    Different states have different opinions on what a taco should be. For instance, this California girl would be very disappointed to be served Taco Bell style ground beef/flour tortilla tacos or Chipotle (which is delicious in its own right but not really considered Mexican food where I’m from - and besides that I’ve never met anyone who gets tacos at chipotle).

    I think we found a winning caterer already. She was one of the contenders a few months ago, but when we found a better deal, we ended up going with that. Let me know what you all think:

    Cocktail hour

    Mexican street corn off the cob with cotija cheese and lime crema

    Fresh yucca fries with chimichurri aioli

    Churros with spicy chocolate Dip


    Dinner:

    Build your own taco bar - flour, corn tortillas, pico, fresh queso, sour cream, veggies, and hot sauces

    Smokey shredded pork tacos with tomato chipotle sauce and beef tacos with tomatillo sauce

    Veggie - portabella mushrooms and zuchinni filler options

    Mexican seasoned rice with beans

    Mexican corn chowder

    $23 per person Smiley smile

    We can upgrade and also have a nacho bar for $5 per person. We'll have to reassess this soon.

    I immediately thought Moe's! We love Moe's. They have a great spread. Definitely beef and chicken, lettuce, tomatoes, cheese, sour cream and salsa, soft and hard shells. Rice, beans, chips, queso and guacamole would be nice to include, also.

    So it looks like just pork/beef for the meat options, then the veggie? I would ask about a chicken option, or maybe even a seafood option as well (shrimp or salmon).

    Do you know what type of beans will be served? I personally would love to be able to choose between refried and regular pinto/black beans.

    Overall though this looks super yummy, and now I'm hungry for lunch and it's only 9:30! Smiley cry

    Whoops, I did type that wrong. The original proposal only had pork and beef on it, but we're going to swap one of those out for chicken.

    That's a good suggestion! I would imagine black beans, but I maybe I'll talk to her about adding in some refried beans. That does sound good.
