    We did soul food at our minimony! Fried & backed chicken, baked Mac & cheese, meatballs, baked beans, green beans with sausage, dirty rice, and deviled eggs!

    We had a lunch reception, so the vibe may have been more casual, but we had pulled pork sliders, 4 cheese mac and cheese, salad, cut up veggies and fruit, brownies and a Scandanavian almond ring cake for dessert. It was YUMMY! It was fall, btw.

    We just had our tasting a couple of weeks ago and it was by far my favorite part of planning! We are doing a plated meal. Appetizer is going to be cordon bleu crostini followed by a traditional caesar salad. Then entrée choices will be bella chicken, blackened salmon, surf & turf, or penne mediterranean. All served with herb roasted potatoes, green beans, carrots and roasted corn. And for dessert we are having oreo cookie ice cream roll with hot fudge alone with coffee and tea service. Plus we are having a s'mores bar for a late night snack.

    We had passed apps served during cocktail hour which were chicken bites with mango sauce, tomato basil grilled cheese squares, and fried ravioli with marinara sauce. We served a salad course which was Caesar salad then buffet style which included craved prime rib and turkey, mashed potatoes with gravy, grilled veggies, and a pasta station with your choice of penne or tortellini and alfredo and vodka sauce. We also had a candy bar that was open during the entire reception. Our late night snack was a nacho bar. Our venue provided our catering and they had standard menus which were all entrée style, but they were out of our buffet so during our initial meeting with them we asked if they had any buffet options. They said they could make us a custom buffet package. The venue coordinator asked us our meat and side preferences. She also suggested some cool options like the past station and nacho bar. The fried ravioli wasn't an option on their menu for passed apps, but I specifically asked if that was an option and the chef agreed. The food was amazing! My mom is still raving about the salad over a year later.

    We had a buffet.

    DH was in charge of the menu - he's got a much better palate than I do.

    I know we had everything from rosemary roasted potatoes, to pasta, to beef, to salmon (I think). The best part about buffets is that they tend to be more bang for your buck. We were able to provide vegetarian and meat-lovers food on the buffet line, and then our vegan friends were sent special dishes. The food was highly praised, so that was a relief.

    Last to this party, but our wedding is this July and were having a Clambake. Guests get the option of chicken, steak, lobster, or a vegetarian main, with clam chowder, corn on the cob, potatoes, steamed mussels and linguica, caesar salad and fresh watermelon.
