Wedding Meal Options - what would you choose?

Hi there!
We are able to choose 2 different meat options (plus a vegetarian option on the side!)
We haven’t had our taste testing yet but are in March. I am planning on having one steak/beef option and the stick on either chicken or fish. Here are the options we can choose from for steak/beef: Filet mignon Roast Tenderloin of Beef Apricot and Ancho Chili Braised Short Rib
Here are the chicken/fish optionsSmiley atonishedeared organic salmon Tuscan Chicken (crispy Parmesan crusted chicken)Roasted Statler Chicken Breast Stuffed Cape Cod Breast of Chicken (cranberry apple bread stuffing)

What would you chose as your two main entrees? Any feedback helps Smiley smile

    I'd choose the Beef Apricot and either the Tuscan Chicken or Chicken Breast with cranberry apple breast stuffing. Since you can have a vegetarian option I'd choose that to be the fish with extra veggies...Vegetarians are eat fish right or is that a pescatarians?

    The ones that sound most appealing to me are filet mignon and cranberry apple chicken. You should ask a handful of VIP guests who will be eating them. Make sure you are very descriptive with the choices on the reply card. Otherwise if you just say “beef” that is too vague and someone could think they are ordering steak and end up with ribs that don’t get eaten as an example.



    Many vegetarians don’t eat fish. They also tend to avoid mushrooms and eggplant because those are the default options and are polarizing. Fish in general is polarizing among carnivores.
    Pescatarians eat fish but that is not common of the majority of vegetarians who consider fish to be a type of meat. Vegans don’t consume any animal products and a good cook/caterer knows how to substitute quality vegan cheeses and meat alternatives.

    Just to clear things up — the vegetarians are getting a completely different meal (this meal is not listed above and it’s completely vegan).
    The options listed above are just for the two main entree choices along with the vegetarian plate that’s already set

    I would go with the simplest options to suit the most appetites. A filet mignon and a chicken breast maybe.

    It really depends on what you know about your guests. By that I mean, do a number of your guests avoid gluten? If so, that could eliminate the crusted chicken and the chicken with the stuffing. How adventurous are your guests' palates, based on when you've hung out with them in the past? If not so much, then the straightforward filet might be the better beef option, or you might want to ask if the beef apricot can be modified to serve the apricot component on the side.


    Some folks love to try fusion and fancy, while others prefer doing the classics well. There is no one way to enjoy dining.

    As an example, we had braised short rib at our welcome dinner and everyone who had it, RAVED about it. However, I don't think those same guests would have enjoyed the Ancho Chili flavor on the short rib.

    Breast of Chicken (cranberry apple bread stuffing) sounds amazing!! Also I'm not a beef person, but the braised ribs sounds great. 😊
