Veggie and Fruit Trays for 90 people?

My FH and I are doing a rustic themed wedding/reception. My uncle is a caterer and has agreed to do all of the hot food (pulled pork and chicken sandwiches, mac n cheese, baked beans). My FH and I are providing potato salad, veggies trays, and fruit to round out the rest of the meal. I'm trying to figure out how much I need of the veggies and fruit. These will not be apps...they'll be part of the meal. I don't actually eat raw veggies and fruit myself, so I'm at a complete loss for how much we'll need.

Any suggestions?

    Why not just supply coleslaw - I'm guessing 2.5 oz. each guest, and you really wouldn't need another vegetable? And just have mixed fruit/fruit salad - around 4 oz. each. You can get both, along with the potato salad, at a local deli. They can probably advise you on how much you'd need. We host a 100 person picnic every fall, and the demand for certain types of food ebbs and flows. My Mom makes a terrific 6 cheese and macaroni, and I ask her to make more each year.

    Dint forget that you are going to need to rent large ice troughs to keep everything cold. No one wants food poisoning on their wedding day.

    If your uncle is a caterer, he should be able to help you out on this one. Just ask him how much he would supply if he had a client who ordered fruit/veggie trays for 90 people (or you could just ask the person/store you're ordering the trays from).
