So I didn’t give my coworkers a plus one unless they were married. Since we sent save the dates/invites out, two have grown much more serious with their boyfriends and I’ve felt bad about them not being able to bring them. We’ve now had several people late cancel on us and we’ve already paid for the food. Is it rude to offer them a plus one now? The wedding is Saturday...

I would just mention “if you’d like to bring your boyfriend he’s welcome to attend as well” or something casual like that

I would do what PPs said - just mention it and if he can't make it, it's all good anyway and understandable.

Totally fine. I get married next Saturday and was able to offer some friends who entered relationships within the past month invitations. No one was offended at all - they were very appreciative.
