Surprise guest buffer?

Hey everyone! Once final numbers are in, is it wise to add in a buffer of a few guests( food and seating) for the surprise guests that may show up?

    Your caterer should do this for you. Provide them with your final count and they will factor in a buffer on their end.

    Once I have the final count and the floor / seating plan from the florist then whatever open seats result that number will became my buffer. I am guessing that will be at most 5.

    Do not add seats for a buffer. If you have 110 rsvp's and tell the caterer 115, you will be charged for 115 whether or not they show up. The caterer can accommodate a few extra and bill you if necessary. I would just make sure you have a few unassigned seats.

    Caterers will charge you for the headcount you provide and will automatically build in a buffer. Don't sweat it!
