Steak or Braised Short Ribs?

We're starting to think about our menu and right now we're trying to decide on our beef entree. It's between red wine braised *boneless* short ribs or steak (prime rib or filet mignon). The steaks would all have to be cooked the same temp, which would be medium. So, as a guest would you prefer a medium-cooked steak or braised boneless short ribs?

    We’re having ale-braised beef short ribs so I might be a bit biased, but we went that route because they were so tender and delicious when we had them at our tasting. Plus, you don’t have to worry about the cooking temperature. Some people won’t touch steak if there’s any pink in it.

    I agree with PP. so I would do the short ribs. I like my steaks medium well, but I know several people that will not touch it if there is even a hint of pink. Then there's the handful of people that likes their steaks bloody

    Ale-braised sounds really good!

    I guess the steaks could be cooked medium-well too. But theres bound to be someone who would prefer rare.

    Short ribs! I prefer my steaks medium rare, and when most places cook to medium they’re actually pushing toward medium well.

    Probably the short ribs. Steak temp is difficult and when they say medium it's usually medium-well. If it was a prime rib carving station that's different since they will have all temperatures on slices available.

    Short ribs will be easier because everyone likes their steak cooked to a different temp.

    I thought we would do short ribs but at a tasting, while they were delicious, they had quite a heavy feel to them in my opinion. Our wedding is in July so I opted for the filet but if we had a fall or winter wedding I may have went with them instead.

    Short ribs because like others have said if guests have a temperature preference for their steaks they may not enjoy it if they have no say in how their steak is prepared. I have family who eats steak well done (i know, it’s terrible) so they would not enjoy a steak cooked medium.

    So many people are picky about how they like their steak cooked. Is possible to have them ALL medium-well? Or does it has to be medium?

    If so, I would do the braised rib.

    We’re facing a similar decision! Personally I would eat a steak served medium (but preferably mid rare); however, I know not everyone enjoys their steak cooked to that temp. Apparently (at least at my venue) they could put steaks back on the grill to cook them further, but I’d rather serve something other than steak all together than have guests have to send their meals back to get brought up to temp. FH is also a chef and used to work at a steakhouse (and has invited some of his old coworkers) so we’re under a lot of pressure to get it right 😅

    I also opt for the short ribs. I do my steak medium well and if it was any other way I wouldn’t eat it lol

    Short ribs for sure! Steaks are so personal to the person, that if they like a well done steak or medium rare, they most likely wouldn't eat it. Plus, short ribs are delicious!

    I'm glad we chose short ribs for our menu then! I didn't even think of the temperature preferences back when we were still building our menu.

    Short ribs- Our caterer said they discouraged steaks because it would be difficult to make them to everyone’s liking. Plus they have to make them in advance for so many people and when they put them in the hot box, it would “cook” them even more. So they usually come out tough and well done rather than medium. They said if the bride and groom want steaks they can accommodate that no problem since it just for two people. Just offer other options for guests.

    I'd pick steak, I just prefer it over short ribs! I think medium is a safe bet.

    I prefer steak over short ribs, but for a wedding, go with the ribs. I prefer my steaks to be on the rarer side and do not find the meat enjoyable if it’s cooked above medium rare. The worst wedding food I’ve ever had was a steak, so I’d err on the side of temperature caution.
