Stations for dinner--what for cocktail hour?

We are doing stations for dinner with a bunch of different options that are a few bites each. So basically it's along the lines of a heavy apps sort of situation. We had our tasting on Friday and we are super excited about that concept, particularly since most of our friends are super adventurous eaters and family members are...not. This way everyone gets something exactly their speed.

But...now what do we do about cocktail hour? How do we differentiate the "normal appetizers" from the "mini dinner foods" that follow? Any ideas?

    It's still somewhat in progress, but right now the menu is:

    Global Street Food Station

    -Korean Chicken Fried Steak Arepa

    -Mini Gyro

    -Ahi tuna...something. Still working the one out

    -Mini Margarita Pizza

    Minnesota Farmer’s Market Station

    -Sous Vide Pork Roast

    -Grilled New York of Beef slider

    -Sweet Potato Gratin

    -Grilled & Roasted Market Vegetable Display

    State Fair Station

    -French Fries

    -Butter Burger Sliders

    -Battered Cheese Curds

    I've only been to a few weddings with cocktail hour. The food was exclusively light apps like cheese, crackers or crostini, and fruit. My FH and I will serve friend green tomato and pimento cheese with crostini, but we are having a bbq dinner (so apps are on theme).

    So I work in catering, and typically cocktail hour sees passed appetizers. One bite each.

    OR displays like antipasto, cheese, spinach dip, crudite, etc.

    cocktail hour is meant to be usually up to 4-6 "Light Bites" per person depending on what you pick and the dinner stations are heavier with more protein and carbs.

    ETA we do Stations *all the time* and this is the way we suggest they are done. Stations are 99% of the time self-serve, and people will not serve themselves 3-bite portions.

    We are doing stations too, but ours is more of a select-your-own portion situation. Anyway, for cocktail hour we are doing passed hor d'oeuvres. I would do something that compliments your food theme. Your menu seems really diverse though so, honestly, just serve whatever you think is yummy!

    I don't think you have to. You start small, with passed things, you gradually open stations, and let it unfold organically. Doing a 'cocktail hour', then dances and speeches and then opening stations really defeats the purpose of station style wedding, IMHO. It should feel like one long cocktail hour punctuated by a dance here and there, a speech here and there.

    Cocktail Hour-

    Made to Order Tacos - Beef, Chicken, Pork w/ assorted toppings & chips/salsa
    Mini chicken & waffle cones, Southern Friend Green Beans, Beef Satay (passed)



    Dinner- served station style
    Salad & Grilled Veggies Assortment w/ bread


    Carved Stuffed Chicken w/ assorted sauces

    Carved Prime Rib w/ assorted sauces


    Mac & Cheese bar made to order

    Option of adding bacon, ham, and truffle oil


    Gnocchi Bar made to order

    Choice of Vodka or Pesto Sauce

    Toppings include sun dried tomatoes, artichokes, mushrooms, and grated cheese


    Dessert-Wedding Cake, Grooms Cake, Cotton Candy, Candy Bar, Donut Wall


    Late night snack-BBQ food truck with sliders and empanadas
