Snack Table Ideas

I am having a super casual, non-traditional, super small ceremony in a brewery. The dinner is being catered by a gourmet food truck that is offering unlimited servings to our guests for the entire reception. The menu includes sandwiches, chicken& waffles, fries, and some other treats that are vegetarian friendly.

However, because the reception is being done cocktail party style, I want to also include a snack table upstairs for people to be able to nibble off of.

My question is, how much many options do I need to include and what should I include for this nibbles table? I definitely plan to include a veggie tray, cheese platter, crackers, and pretzels. I am not permitted to have any heating elements upstairs, nor will I have access to refrigeration or a staging area- so anything I plan for needs to be easily prepped and transported so it can arrive and be set right out.

So- what else should I include? Or is what I have listed enough?

    Oh, and I know I am thinking about this way in advance- its because my future father in law runs a restaurant and has offered to handle the snack table but wanted to know what I was considering including. And I really didn't have an answer because I was planning on making it all myself the week before.

    If you don't have access to a refrigerator, I'd nix the cheese.

    What about offering some cookies or brownies in bite size? What you have sounds nice. How about some nuts and mints? I have food allergies and I am a gastric bypass surgery so I am very limited on what I can eat and drink. I cannot eat anything on your list but I can eat cashews LOL. Who is taking care of it will not miss the wedding or be stressed out? Because that isn't worth it.

    It sounds like your wedding will be neat and one-of-a-kind with the food truck! Congratulations to you both!

    To answer your question.... we just had my bridal shower yesterday and served lots of snacky foods that didn't need temperature control.

    Whenever I plan snacks and consider variety, I try to base my consideration on range and taste. For instance, something for the vegetarian/vegan and carnivores alike, so a veggie tray (just like you listed) and then also a smoked meat tray (that doesn't need refrigerator necessarily, especially depending on what you choose) may be appealing.

    Taste wise, I always try to offer snacks that are sweet, savory, spicy, and salty. On the sweet side and salty side, my girls made two great snacks: popcorn drizzled in melted candy in our wedding colors, and pretzels dipped in melted chocolate in our wedding colors. I attached a picture so you can see how they look as they're being made to see if they appeal. I can find the directions/recipes if you like, or you can Google. The popcorn was not salted, so it was literally just a sweet snack, and the pretzels were salty, of course. Our wedding colors are red, white, and blue, but you could literally do these two (both easy to make!) in any color.

    @JPB- I do like the flavor idea!

    And I do have 1 vegetarian who will be attending- but she is the only one with dietary restrictions.

    So please, send me suggestions.

    @E-Tex- I keep wavering about the cheese, but my Future father in law showed me a marble block server the restaurant uses- where you freeze it overnight and then you serve the cheese slices on it so they stay chilled for over an hour. And since they will be catering the snack table, I will have access to it.

    @Maggie- I definitely agree that I don't want anyone stressed out or missing the wedding, and I think I worded it confusingly in my post. My future father in law will not be setting it up or running it. We are hiring some of his wait staff to assist the day of and handle food. He just wanted to know what I wanted and he was going to purchase everything and have his staff prep it. Rather than trying to hire a second caterer for one snack table.

    Definitely include sweets to nibble on. I recommend girl scout cookies... people will FREAK.

    You could add a trail mix bar. Put a couple types of nuts, dried fruit, chocolates, marshmallows, popcorn, candied ginger, wasabi peas, rice crackers, and let people go to town. Better than beer nuts Smiley laugh

    If you want to change it up a bit, how about chocolate covered potato chips? They're salty, sweet, and crunchy all in one!

    Ok now I understand better LOL. I have a lot of family that are from southern Ohio (from the hills LOL). When they received my wedding invitation they were like what do we bring? I was like nothing it is catered LOL. Completely blew their minds that all they have to do is show up. A lot of people want to self caterer and don't think about family or friends missing a huge part of their ceremony to take care of their food. I think I may of came off snooty myself. I am sorry.

    Erica, thanks for this post! We are also doing an intimate, informal wedding with a food truck and I want to do a snack table also. Was trying to think what would be good.

    Hey guys I saw some really cute cookie&milk snacks served in a wedding, but I did't save the link.I will try to find it and post since it really looks cute! Also, you can always go for some Mexican snacks or mini pizzas Smiley smile
