Smoked Salmon Help

Hi! We already have our caterer bringing in serve your self appetizers, but I also want to order in some smoked salmon to have them serve as an appetizer as well. Thoughts on where I should order it from and how much?? I think we will have between 125 and 140 guests (still waiting on some RSVP's).

    Will your caterer let you bring in additional food? Why isn't this something that they can handle?

    Are you talking a whole Salmon? I know you wedding is private but if it is going to be in a hot summer month you may want to think about that.

    I'm with @LB. The caterer should be able to handle any requests. If you haven't checked with them that's a slap in the face.

    Did you check with your caterer to make sure that they'll allow you to bring in food that they did not prepare?

    I know my contract stated that I could not bring in anything other than cake/dessert from a secondary food vendor/caterer.

    @Svetlana, smoked salmon (also known as lox) is cured so it actually keeps fairly well.

    Your caterer should be able to provide this. Im a bit confused, are you bringing appetizer for the caterer to serve?

    About the smoke salmon I would just google to find some vendors- Im sure you'll find someone from Canada, Washington State or Alaska that can provide it

    I emailed them but haven't heard back, so thought I would reach out... we are getting married in the world's smallest town (Silverton, CO) with the most laid back vendors. Smoked salmon was not an option on their catering menu... so if they can't provide it and if they are OK with us providing salmon, I need to know where to purchase and how much. It will likely be fairly cool out for our wedding (at 11,000 feet), so I'm not concerned with serving SS, plus it should be cured.

    @LB I know but it can have a really strong smell to it in really warm uncontrolled environments.

    OP, this is my favorite place to buy smoked fish when I'm in NYC. They ship nationwide. Not sure about the amount but I bet if you call them they could help you figure that out.

    Be specific in your inquiries. You are talking about lox. There is cold and hot smoked salmon, both of which are delicious, but hot smoked salmon is cooked, with an entirely different texture.

    OMG I'm obsessed with smoked salmon... you're making me hungry! Costco has really good smoked salmon, but it's not a huge amount. You'd have to get a lot of them.

    You are very lucky with the laid back caterers. Mine are also this way and it can save you a ton. For professional association Christmas parties I planned in the past, my caterers were fine with me buying 18 lbs of frozen cocktail shrimp from Sam's Club as well as boxes of frozen macarons that were 75% cheaper than bakeries. I was able to drop it off with them a few days before the event. Just make sure you work it out with them about any extra charges for the labor of them defrosting and putting it out on trays. I would be doing the same for my wedding, but the groom's side is from a seaport and are shrimp snobs. I would also be supplying the salmon to them myself for canapes, but they offer a full side of salmon that is decorated with cream cheese in a piping bag as scales. It looks fabulous and they include capers, minced onions, and special dill dip.

    I highly suggest you buy frozen smoked salmon from Ikea, Costco, or Sam's. Sam's is listing 1.25 lbs for $15.99 at my store. All of Sam's product pricing will be on their website for you to cost compare after entering location. I don't think Costco has everything on their website, but there is a Norwegian Line brand that comes presliced and edged with pepper that I get for appetizers for small get togethers at my house. Ikea will really have your best selection for any type of special cured salmon and they will also have great mustards to pair it with. I stock up whenever I pop in.

    Yes, but it also has a restaurant and grocery. They are a Swedish company and have lots of interesting local foods common in Scandinavia but not here. I love their lingonberry cookies and smoked salmon roe paste in a tube. They also have great meatballs.
