Signature Drink Help...beer and wine only venue

Sorry if this is a repeat post - on my phone. My venue is a winery - we can only serve wine and beer. I thought we could only serve straight wine, but my venue just sent me an email saying, "If you want to do a sangria with wine you can. The mixture has to be prepared & in a container ready to go & the bartenders can then pour in the wine. So we don't actually make it, but we can assist with the wine if that makes sense!"

We're having 100 guests, cocktail hour, 3 meat 3 side reception.

I need advice...

Am I asking for disaster by mixing my own sangria the day before and bringing it?

What would you do?

I have found a lot of fall mixes like "Apple Cider Sangria" that can be mixed with red or white wine. If we went this route then we would have 'His Drink: Kentucky Ale Beer' 'Her Drink: Apple Cider Sangria'. Guests would also have the option of plain red or white wine.

My concern is making the mix before and bringing it. I'm totally against self-catering. Is this self catering?

    Could you order that from a distributor or bar/restaurant you love and pick it up the day before? Might be easier and then you can do a drink tasting which just sounds fun.

    Apple cider sangria sounds delicious, however, I would check with the winery to see if the bartenders will allow the guests to choose red or white wine as the mix in or if the bartenders will mix the sangria before the bar opens and you can only have red or white.

    @Chapel I checked with my winery and they said we could have 1 mix and the guest could choose white or red wine. The key is picking a mix that tastes great in either wine. This made me super happy because I have guests coming who get migraines with red wine.

    I wouldn't consider it self catering but if you do make it yourself, make sure to test the mix with the wine that will be served (both red and white) as sangria can taste different depending on which wines are used.

    I would worry about the apples. Once you cut them don't they brown fast or are they ok if you keep them in the fridge? I've never tried saving them so I am honestly not sure

    Apple Cider sangria sounds delicious!

    Also just wanted to add that a winery in our wedding town does an Angry Orchard Cider, and then puts Merlot on top. If done correctly, the Merlot won't mix with the Angry Orchard, and makes for a delicious ombre drink. =)
